As the first semester of this new school year is coming to a close, students are getting increasingly excited to get out of school for 2 weeks, and spend time with families.
But that just means that, as a teacher, my work load is ramping up. Making tests. Writing report cards. Marking said tests. Planning for the next semester…
Contrary to popular belief, teachers work their butts off for most of the year, and will even continue planning during the summer break.
So while my workload is crazy busy, I’m going to be making super simple, quick and easy recipe ideas that you can make in under 5 minutes.
But really.. what’s new? I feel like most of my recipes in the past few months have been super fast and easy recipes using minimal ingredients.
So what do we need for this recipe??
- peanut butter
- coconut oil
- Nutella
That’s seriously it!!
Okay, so this recipe might look very similar to my Chubby Hubby Nutella Cups recipe. And if you haven’t tried that one yet, I would definitely suggest you give it a go! But right now, I don’t have any pretzels, and I am too swamped with work to come up with completely new recipes for you this week. So this is going to have to do for the time being.

Mini Peanut Butter Nutella Cups
Ingredients
- 3/4 cup peanut butter
- 6 Tbsp coconut oil, divided
- 3/4 cup Nutella
Instructions
- Line a mini muffin pan with paper liners. Set aside.
- In a medium microwave safe bowl, melt the peanut butter and 3 Tbsp coconut oil in 30 second intervals, mixing until smooth.
- Divide evenly into the prepared muffin pan. Place in the freezer.
- Meanwhile, melt the Nutella and remaining coconut oil in a microwave safe bowl in 30 second intervals, mixing until smooth. Pour on top of the slightly frozen cookie butter cups. Place in the freezer to harden completely.

Can I use another oil instead of coconut oil ?

I haven’t tried with any other oil, and I don’t think it would work with another oil. The coconut oil hardens when cool, so that’s why it stays solid.

I’m sorry . I’ve never used coconut oil before. Is it liquid ? I see jars also.

Coconut oil is solid until heated. Then it becomes liquid. If you are using coconut oil for this recipe, I would recommend getting the ones from the jars.

I personally like the coconut taste, but if you don’t make sure you use refined coconut oil for a milder taste!

They get a little messy if you keep them at room temperature, so I would store in the fridge/freezer until ready to eat!
