January is finally over. That month felt like an eternity. Now, we are entering the month of love.
With Valentine’s day right around the corner, I want to make sure that I have at least one Valentine’s Day recipe up on the blog.
These Mini Red Velvet Cheesecakes may just be my one (and only) Valentine’s Day recipe this year.
Last year I was SO on top of my holiday themed recipes, especially with Valentine’s Day.
Two of my favourites were my White Chocolate Valentine’s Day Chocolate for Two and my Valentine’s Day Bark. Surprise surprise, they both involve chocolate as the main ingredient.
So this year I am going in a different, although equally delicious, direction.
I am fusing some of my favourite desserts together: cookies and cheesecake.
These cute treats are very similar to my Chocolate Chip Cheesecake Cookie Cups, but without chocolate chips in the base cookie. And I made them red to match the Valentine’s Day theme.
My husband loved these personalized cheesecake bites, so I know I will be making them again for Valentine’s Day! But I might even suggest you try adding in chocolate chips in the cookie layer just to add more texture. John told me not to do that for him; he likes them just the way they are. But for me? I think I will be making half of the batch with chocolate chips in the cookies!
The best part about making these is that they are so easy to make. All you need to do is make the cookie dough, bake it, make the cheesecake layer, bake it.
This might be the reason that I don’t make regular sized cheesecakes. Mini cheesecakes are so easy to make and don’t crack on the top. PLUS, they are perfectly portioned, so you don’t “accidentally” give yourself a huge slice.
And if your partner gives you an entire tray of these for Valentine’s Day? You know that that is love!
Mini Red Velvet Cheesecakes
Ingredients
Cookie Layer
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1/2 cup butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- red food gel or food colouring
Cheesecake
- 12 oz cream cheese, softened
- 2 Tbsp sour cream
- 1/3 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350˚F. Line two muffin pans with paper liners (I actually prefer silicone liners). Set aside.
- In a large bowl, mix together the flour, cocoa powder and baking soda. Set aside.
- In the bowl of a stand mixer, beat the butter until creamy. Add in the sugars, and mix until light and fluffy, Mix in the egg and vanilla. Add enough red food gel until the mixture attains your desired colour.
- Using a cookie scoop, scoop the batter into the prepared muffin pans. Bake for around 8 minutes.
- Meanwhile, beat the cream cheese in a large bowl until smooth. Add in the sour cream and sugar and beat until combined. Mix in the egg and vanilla.
- Using a cookie scoop, scoop the cheesecake mixture on top of the baked cookie layer. Return to oven and bake for 18 more minutes. Store in an airtight container in the fridge.
