When I was pregnant, I taught myself to love dates.
You know the old wives tale: eat enough dates near the end of your pregnancy to help with labor. I stocked up on dates near the end of both pregnancies, and had such easy labor with both kids. Take this with a grain of salt, but I can’t say anything negative about eating dates during pregnancy.
Anyways, all this to say I got very creative with making dates recipes for pregnancy. And these Mini Vegan Protein Snickers Cups might be one of my favorite recipes I made.
I wanted to make a healthy Snickers protein bar recipe, but thought I should probably make them mini and bite sized so I don’t end up eating the entire tray. This tastes like your favorite candy bar, but so much healthier! The crunchy peanuts compliment the chocolate coating perfectly. You won’t even miss the caramel layer from the traditional candy bar because the dates make it taste almost better than the real thing, in my opinion. They are the perfect treat, whether or not you are pregnant!
Mini Vegan Protein Snickers Cups Ingredients
You just need 8 simple ingredients to make these Vegan Protein Snickers Bites. All you need is:
- ‘quick oats
- unflavored protein powder
- pure maple syrup
- peanut butter
- medjool dates
- vegan chocolate chips
- coconut oil
- roasted peanuts
Equipment
- mini muffin tin
- microwave safe bowls
Tips
Storage: Store these snickers cups in an airtight container at room temperature for up to 2 weeks, or in the fridge or freezer for up to 3 months.
Make it peanut free. To bring these to my work, I need to make a peanut-free option. So instead of the peanut butter, I love to use either cashew or sesame seed butter. Then instead of the peanuts, top the melted chocolate chips with sea salt.
Swap out the chocolate. I love using either semi-sweet or rich dark chocolate chips for the melted chocolate. But peanut butter or white chocolate chips would be a great variation.

Mini Vegan Protein Snickers Cups
Ingredients
- 1/2 cup quick oats
- 1/4 cup unflavored protein powder
- 1/4 cup maple syrup
- 3 Tbsp peanut butter
- 5 dates cut in half
- 1/4 cup vegan chocolate chips
- 1/2 tsp coconut oil
- 3 Tbsp roasted peanuts
Instructions
- In a small bowl, mix together the oats, protein powder, maple syrup, and peanut butter until smooth.
- Scoop 1 Tablespoon of the mixture into 10 cavities of a mini muffin pan.
- Place half a date on top.
- In a small microwave safe bowl, melt the chocolate and coconut oil in the microwave in 30 second intervals, mixing until smooth.
- Divide the chocolate evenly on top of the dates. Top with peanuts.
