Easy M&M Rice Krispie Cookies recipe. These quick and simple treats are the perfect last minute dessert or snack idea.
I took a much needed one week break from social media and from adding any recipes to the blog. That’s going to be all for a “maternity leave” for me because I love sharing recipes with you all!
And what better way to come back to sharing recipes than these M&M Rice Krispie Cookies?
This came about because I have a whole box of Rice Krispies that are turning pretty stale. I didn’t want to eat them as cereal, so I had to get creative.
And when I want to use up something in my house, I will always try to make cookies with them. So here we are.
What do you need to make these M&M Rice Krispie Cookies?
Apart from stale (or fresh!) Rice Krispies, it is mostly pantry essentials:
- brown & white sugar
- eggs
- butter
- vanilla
- flour
- shredded coconut
- Rice Krispies
- oats
- baking powder
- salt
- M&Ms
That’s it!
These cookies are pretty crunchy. I know there are people who do not like crunchy cookies, but I love all kinds. These are a nice change to my typical chewy cookie recipes. An added bonus? They go really well with tea or coffee.

M&M Rice Krispie Cookies
Ingredients
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 cup salted butter, softened
- 1 tsp vanilla extract
- 2 1/4 cup all-purpose flour
- 1 cup unsweetened shredded coconut
- 1 cup Rice Krispies
- 1 cup rolled oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup M&Ms
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.
- In the bowl of a stand mixer, cream together the sugars, butter and vanilla until light and fluffy. Mix in the eggs one at a time until fully incorporated.
- In a separate bowl, mix together the flour, coconut, Rice Krispies, oats, baking powder and salt.
- Slowly mix in the dry ingredients into the wet ingredients until fully incorporated. Fold in the M&Ms.
- Using a medium cookie scoop, scoop the batter onto the prepared cookie sheet. Bake in the preheated oven for around 16 minutes. Allow to cool on the pan for around 3 minutes before transferring to wire racks to cook completely.

This recipe was my kid’s dream cookie! Crispy around the edges, but chewy in the middle, with Crunchy bites from the M&Ms – mmm mmm mmm, this was fantastic.
I have a feeling he’ll be asking to make these again and again.

These cookies are amazing, but the actual written recipe needs a bit of work.
Thankfully I’m a smart cookie and could make educated guesses, but no where in the recipe does it explicitly state where to add the flour or the eggs!
For any novices, add the eggs after creaming the butter with the sugar. Add the flour to the other dried ingredients.
All that aside though, what a great cookie. I didn’t have m&ms so subbed with squares of dark chocolate which were perfect. I used Christmas coloured rice krispies for a bit of a festive twist. Next time I think I will experiment with a bit less sugar, but honestly the texture was so good I might not in case I mess things up!
