Clearing out my fridge and my cupboards for my move to Chicago in 2 WEEKS!! How is this happening so soon?
Okay, so I’m not actually moving to Chicago in 2 weeks. First, I am going to Italy for a couple of weeks. Then, I am going to Vancouver for 1 month. THEN, finally, I am going to Chicago.
The summer is already packed with activities, but I am definitely not complaining!
So making food with all of the goodies I have at home shouldn’t be hard, right? Until I realize that I have a huge stash of cashews in my pantry.
And I mean HUGE.
Okay, so yeah. That doesn’t sound like a problem that most people would mind having. But when I have 2 weeks left and no way of bringing it to my nut free school? This might be a problem!
So lately, I have just been throwing the cashews into recipes ranging from my spicy cashew chicken to re-shooting some favourite recipes from the archive, including my butternut cashew squares and my chocolate chip cashew cookies.
I liked those cookies so much, I decided to make another cookie recipe. These Mocha Cashew Cookies might be my new favourite cashew recipe!
Not only are they super easy to make (a bonus during exam season), they are so addictive!
I swear, I ate half of this batch of cookies in one night.
I may not have a cashew problem anymore! But I may have a clothing problem after this. Do you think I will be able to fit into my summer clothes?

Mocha Cashew Cookies
Ingredients
- 2 cups chocolate chips, divided
- 1 tsp coconut oil
- 2 Tbsp instant coffee powder
- 2 tsp boiling water
- 1 1/4 cup all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/2 cup cashews, chopped
Instructions
- Preheat the oven to 350°F.
- In a microwave safe bowl, melt 1/2 cup of chocolate chips and coconut oil in 30 second intervals, mixing until smooth. Allow to cool slightly.
- In a small bowl, disolve the instatnt coffee in the hot water. Set aside.
- In a medium bowl, mix together the flour, baking soda and salt.
- In the bowl of a stand mixer, cream together the butter, sugar and coffee until light and fluffy. Beat in the egg and melted chocolate. Slowly add in the flour mixture until fully incorporated. Fold in the remaining chocolate chips and cashews.
- Scoop the dough with a cookie scoop onto an ungreased cookie sheet and bake in the preheated oven for 10-12 minutes. Allow to cool for around 2 minutes on the cookie sheet before transfering to wire racks to cool completely.
