These Monster Eyeball Cookies are perfect for Halloween. So easy and fun to make and eat, they make a great snack or dessert recipe.

I have been saving this recipe for a while now. I don’t want to post the Halloween recipes TOO early, but how early is too early? My local grocery stores have been selling Halloween candy since August!
I think with one month to go, I am allowed to have something deliciously spooky on my blog.
Halloween is one of my favourite holidays. I mean, when else can you dress up, buy a LOT of candy and watch horror movies all night?
To be honest, that sounds a lot like my Friday nights. But at least on Halloween it is more acceptable to admit it.
Or maybe it’s not and I am being judged for not giving all of my candy to the Trick or Treaters. If you want to know, I get maybe one or two kids all night EVEN THOUGH I have pumpkins and decorations at my door. What more can I do?
But if, by some miracle, I get a whole bunch of cute kids in costumes this year and get left with no leftover candy, I need a backup to satisfy my sweet tooth craving on Halloween.
These Monster Eyeball Cookies should do the trick. They will be mine because no kid will accept baked goods from a stranger, even if they look this good.
These cookies are a lot like my brown sugar crinkle cookies. In fact, they are almost identical, if you remove the powdered sugar, add some green food coloring and plop some eyeballs on jam and stick them on top. But it is one of my tried and true recipes, so I know I couldn’t fail with it.
I might make these Monster Eyeball Cookies for my students for Halloween because I had so much fun making them! Much easier to make than the cupcakes I make for each and every one of them for their birthdays.
Maybe I should switch it up and make birthdays “Eyeball Cookie Days”. That just means I gotta stock up on eyeballs before the Halloween season is over!

Monster Eyeball Cookies
Ingredients
- 1 1/2 cups brown sugar
- 1/2 cup salted butter, softened
- 2 tsp vanilla extract
- 2 large eggs
- 3/4 tsp baking soda
- 2 1/2 cups all-purpose flour
- green food colouring (I used the gel)
- strawberry jam
- large candy eyeballs
Instructions
- Preheat the oven to 350°F. Line baking sheets with parchment paper or a silicone baking mat.
- In a large bowl, beat together the sugar, butter and vanilla until light and fluffy. Add in the eggs one at a time, beating well after each addition.
- Mix in the baking soda. Add in the flour, and mix until fully incorporated. Mix in enough colouring to get your desired colour.
- Using a medium cookies scoop (or your hands), scoop the batter onto the baking sheet, keeping them around 1-2 inches apart.
- Bake in the preheated oven for 12 minutes, or until the cookies have spread and cracked on top. Allow to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
- Add around 1/4 tsp of strawberry jam to the centre of each cookie. Place a candy eyeball on top of the jam and press down.
Notes
- Any red jam works. The large candy eyeballs are best to use in this recipe.
- Store in an airtight container for up to 5 days.
