Easy Nectarine Crisp recipe. Made with pantry essentials, this dessert idea is the perfect sweet treat to use up your summer fruit.
It’s rare that I have a recipe using nectarines.
I love nectarines so much that I usually eat them all. And now it seems like I have passed down my love of nectarines down to Evan who, at 19 months old, is eating almost his bodyweight worth of fruit this summer. But right before our road trip, we had 4 nectarines that needed using, so this Nectarine Crisp had to happen.
What you need to make Nectarine Crisp
It’s basically just pantry essentials and nectarines. All you need is:
- nectarines
- lemon juice
- white sugar
- cornstarch
- vanilla
- flour
- oats
- brown sugar
- salt
- cinnamon
- butter
That’s it!
Variations
- Frozen nectarines. You can use frozen nectarines instead of fresh ones. All you need to do is allow them to thaw, then discard he excess liquid.
- Add in some blueberries and blackberries. This nectarine crisp goes so well with blueberries or blackberries. Simply add in a couple of handfuls of blueberries or blackberries to this recipe, and cook as directed.
- Gluten free option. If you needed a gluten free crisp, all you need to do is replace the flour with a gluten free flour or almond flour.
- Vegan option. If you wanted to make this crisp vegan, you can replace the butter with vegan butter. It still works just as well!
Make ahead/Freezing Directions
To make ahead: all you need to do prepare the filling and prepare the topping separately and store them in the fridge. When you are ready to use them, just assemble and put in the oven.
Freezing instructions: Allow the crisp to cool completely, then wrap tightly in plastic wrap then wrap with aluminum foil. Freeze for up to 2 months. When ready to use, allow to thaw completely then place in a preheated oven at 350°F for 20-25 minutes, or until fully heated.

Nectarine Crisp
Ingredients
Filling
- 4 medium nectarines, pitted & sliced
- 2 Tbsp lemon juice
- 2/3 cup granulated sugar
- 2 Tbsp cornstarch
- 1 tsp vanilla
Topping
- 2/3 cup all-purpose flour
- 2/3 cup old fashioned oats
- 2/3 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350˚F. Lightly spray a 9x9 inch square pan with cooking spray and set aside.
- In a large bowl, mix together the filling ingredients. Pour into the prepared pan.
- In a medium bowl, mix together all of the topping ingredients until fully combined.
- Spread the topping ingredients evenly over the nectarine mixture, then bake in the preheated oven for 40-45 minutes, or until the top is golden brown and filling is bubbly. Allow to cool for at least 20 minutes before serving.
