Writing this post for No Bake Coconut Bars quickly while Evan sleeps because I have been seriously lagging in keeping up with my blog.
But with Evan only being 3 weeks old, I am definitely prioritizing spending time with him. He has already grown and changed so much, and I don’t want to miss a moment.
Which means, all of my recipes that I make now will be extremely simple. 5 minutes or less. Maybe 10 if I’m feeling fancy.
This recipe for No Bake Coconut Bars uses only 4 ingredients, and is ready in under 5 minutes. It is seriously so easy, you can make it any time you are craving something sweet.
Or in between newborn naps. I am definitely getting more and more skilled at squeezing some baking in in between naps.
What do you need to make No Bake Coconut Bars?
Here are the 4 ingredients that you will need:
- unsweetened shredded coconut
- maple syrup
- coconut oil
- vanilla extract
That’s it!!

No Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut
- 1/4 cup pure maple syrup
- 2 Tbsp coconut oil
- 1/2 tsp vanilla extract
Instructions
- Add all of the ingredients to a food processor and pulse until combined.
- Press into a loaf pan and refrigerate for around 1 hour. Cut into bars and store in an airtight container in the fridge.
