THESE NO BAKE PEANUT BUTTER AND CHOCOLATE OAT FUDGE BARS!!!
I’m kind of obsessing over here. Especially since I can never have enough chocolate and peanut butter recipes up on this blog. And I hope I never stop producing them. But since ’tis the season for no bake recipes. I don’t remember the last time I turned on my oven. And I’m not even sad about it.
These fudge bars sort of remind me of those oat fudge bars from Starbucks, but around 100x better because, hello? Peanut butter is involved!
I am sure this will taste just as good with any other type of nut butter, but I have been craving peanut butter all year. The summer is almost the only time I can eat peanut butter because I work in a nut free school.
And as I have around half a cupboard dedicated to different types of peanut butter, I think I better use as much of it as I can before the summer ends.
No Bake Peanut Butter and Chocolate Oat Fudge Bars Ingredients
You just need 6 simple ingredients to make these No Bake Chocolate Peanut Butter Oatmeal Bars. All you need is:
- quick oats
- pure maple syrup
- natural peanut butter (and/or creamy peanut butter)
- sea salt
- vanilla extract
- chocolate chips
Equipment
To make these No Bake Chocolate Peanut Butter Bars, you will need:
- parchment paper (or wax paper)
- 8×8 square pan
- medium microwave-safe bowl
- rubber spatula for pressing mixture down (or you can use the back of a spoon)
Tips
Storage: You can store these No Bake Chocolate Oat Bars in an airtight container at room temperature for up to 1 week. They can last for up to 2 weeks if stored in the fridge.
Do not switch out the oats. Because it is a no bake recipe, rolled oats cannot be used in place of the quick cooking oats. They are tougher to eat, and can cause digestive problems in some people.
Variations
Switch up the peanut butter. I am a peanut butter lover, but if you have allergies or don’t have peanut butter on hand, you can use any nut butter you like. I particularly like cashew butter or sunflower seed butter in this recipe.
Experiment with different chocolate chips. I love using either semi-sweet or dark chocolate chips, but use what you have on hand! I’m going to try white chocolate chips next time I make these no bake bars.
Use a different liquid sweetener. Instead of maple syrup, you can use agave syrup or honey. If you wanted a less healthy alternative, corn syrup works well in this recipe too.

No Bake Peanut Butter and Chocolate Oat Fudge Bars
Ingredients
Oat Layer
- 2 3/4 cup quick oats
- 1/2 cup pure maple syrup
- 1/4 cup natural peanut butter
- 1/2 tsp salt
- 1 Tbsp water
- 1 tsp vanilla extract
Fudge Layer
- 1/2 cup creamy peanut butter
- 4.5-5 oz chocolate chips
Instructions
- Line an 8x8 square pan with parchment paper. Set aside.
- In a medium bowl, mix together the oat layer ingredients until fully combined. Pour half of the oat mixture into the prepared pan.
- Place the fudge layer ingredients in a microwave safe bowl. Heat in the microwave for 1 minute, stopping to mix after 30 seconds.
- Pour the chocolate mixture on top of the oat mixture. Sprinkle the remaining oat mixture on top of the chocolate layer and press down with the back of a spoon.
- Place the mixture in the fridge to harden for around 4 hours, then cut into squares.

These look awesome!! I made them and the oat layers didn’t do anything I hours later they still just fell apart. Was like the mixture wasnt wet enough to set. Followed the instructions
