I just finished a 10 hour marking session, and now I am DONE for the year!
That is.. done marking. I still have to prepare my lessons for next year, but I’m only going to start thinking about that after Christmas. Until then, all I’m thinking of doing is baking cookies.
And these Nutella Stuffed Cookies are the perfect cookie recipe for the holidays. All you need is:
- all-purpose flour
- white sugar
- cornstarch
- baking powder
- eggs
- coconut oil
- vanilla extract
- Nutella
That’s it!
If these cookies look familiar, it’s because you have probably been following my blog for a while now. I made a Nutella Stuffed Cookies with Sprinkles all the way back in 2013.. that was 7 years ago! So this recipe is almost identical to the one I made 7 years ago, but without sprinkles. Because, for some strange reason, I don’t have any sprinkles in the house.
These cookies are perfect to make during the holidays. They do require a lot more time than typical cookie, but that’s what the extra days off are for!

Nutella Stuffed Cookies
Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/4 cup cornstarch
- 2 tsp baking powder
- 2 large eggs
- 1/3 cup coconut oil
- 1 tsp vanilla extract
- Nutella (around 3/4 cup)
Instructions
- Line a baking sheet with wax paper. Form 1 tablespoon balls of Nutella and place on the prepared baking sheet. Freeze for at least 15 minutes.
- Preheat the oven to 350˚F. Lightly spray two baking sheets.
- In a medium bowl, mix together the flours, sugar, cornstarch and baking powder.
- In a separate bowl, mix together the eggs, oil and vanilla until fully combined.
- Slowly mix in the wet ingredients to the dry ingredients, and mix until fully incorporated.
- Scoop a tablespoon of cookie dough and flatten in your hands. Place the frozen Nutella ball in the centre of the flattened cookie dough. Wrap the dough around the Nutella ball and press to seal.
- Place the cookies on the prepared baking sheet, and bake for 9-10 minutes. Allow cookies to cool on the baking sheet.
