Easy Oatmeal Butterscotch Chocolate Chip Cookie Bars recipe. This dessert idea is my new favorite way to enjoy a batch of cookies with little effort.
Clearing out my pantry yesterday night, I found an unopened bag of butterscotch chips. This is a crazy thing in my house, because I always open my chocolate/butterscotch/white chocolate chips as soon as I buy them. So of course, I needed to make something with them.
These Oatmeal Butterscotch Chocolate Chip Cookie Bars were the perfect sweet treat to use up that bag. I was really craving oatmeal butterscotch chocolate chip cookies, but was too lazy to make individual cookies. A cookie bar recipe is exactly what my pregnant, exhausted self needed.
Oatmeal Butterscotch Chocolate Chip Cookie Bars Ingredients
These Chocolate Chip Butterscotch Cookie Bars are made with a couple of pantry essentials. All you need is:
- 1/2 cup softened butter
- 1/2 cup dark brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all purpose flour
- 1/2 tsp baking soda
- 3/4 cup rolled oats
- 1/2 cup quick oats
- 2/3 cup semi-sweet chocolate chips
- 1/2 cup butterscotch chips
Tips
Storage: You can store these chocolate oatmeal butterscotch bars in an airtight container at room temperature for up to 4 days. Instead of cutting them right away, a better way to store them is uncut in the baking pan covered with aluminum foil. That way they will not dry out, and keep their softer texture for longer.
Sprinkle some more chocolate and butterscotch chips on top of the bars before baking. This is my number one tip, because it really makes the final product look bakery worthy. Oftentimes when you mix everything together, the chocolate chips get buried and it doesn’t look as pretty. This ensures a gorgeous bar that pops!
Variations
Switch up the mix-ins. If you aren’t a butterscotch lover, you can make this with just chocolate chips. I also love making this with half butterscotch chips and half dark chocolate chips. But nuts, seeds or dried fruit are also great mix-ins in these oatmeal cookie bars.
Cut back on the sugar. I have a major sweet tooth. But because of the sweetness from the butterscotch morsels, some people may think there is too much sugar in these oatmeal bars. Feel free to add less sugar for a less sweet version.

Oatmeal Butterscotch Chocolate Chip Cookie Bars
Ingredients
- 1/2 cup salted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 3/4 cup rolled oats
- 1/2 cup quick oats
- 2/3 cup chocolate chips
- 1/2 cup butterscotch chips
Instructions
- Preheat the oven to 350˚F. Line an 8 inch square baking pan with parchment paper and set aside.In
- In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla.
- In a medium bowl, mix together the flour, baking soda and oats.
- Slowly mix the dry ingredients into the wet ingredients until combined. Fold in the chocolate chips and butterscotch chips.
- Spread the batter onto the prepared pan and bake in the preheated oven for 25-30 minutes, or until the center doesn't jiggle when you shake the pan.
- Allow to cool for at least 10 minutes before cutting into squares.
