Weekends with kids are drastically different than weekends pre-kids.
Before kids, me and John would do date nights, go on weekend getaways, spend all day in bed watching movies. These days, weekends just mean cleaning the house. Well actually, most days are just us cleaning the house with a toddler. Weekends are just the deep cleaning days.
John is more gifted at cleaning than I am. He will be cleaning the bathrooms, wiping the floors, doing dishes, vacuuming. Whereas in that time, all I managed to do is reorganize the liquor cabinet. But hey look! I found a huge bottle of rum. So I baked these Oatmeal Rum Raisin Cookies, which gave John some more dishes to do. But dishes in exchange for these cookies is a pretty good deal if you ask me.
Oatmeal Rum Raisin Cookies Ingredients
All you need to make these cookies is:
- raisins
- rum
- salted butter
- brown & white sugar
- eggs
- vanilla extract
- white flour
- baking soda
- ground cinnamon
- ground nutmeg
- ground ginger
- rolled oats
That’s it! Basically pantry essentials, right?

Can I use Quick Oats instead of Rolled Oats?
While you can use the same amount of quick oats in the place of rolled oats, the cookies will not turn out as chewy. However, if that is the only thing you have on hand, it is a fine substitute in a pinch.
Can you freeze these cookies?
Yes! These Oatmeal Rum Raisin Cookies freeze very well!
- Freezing the cookie dough: If you want to freeze the cookie dough, just line a baking sheet with parchment paper. Scoop the cookie dough on top then place in the freezer. Allow to freeze for around 2 hours, then transfer the frozen cookie dough to freezer bags. The cookie dough keeps for around 3 months in the freezer. You can actually bake these cookies from frozen. Just add around 2 minutes to the baking time.
- Freezing the baked cookies: If you wanted to freeze cookies you have already baked, just place the baked cookies in freezer bags. Try to suck out as much air from the freezer bags as possible to avoid freezer burn. The baked cookies will last around 3 months in the freezer. When ready to eat, allow to thaw at room temperature or microwave for around 5-10 seconds.

Oatmeal Rum Raisin Cookies
Ingredients
- 1 cup raisins
- 1/4 cup rum
- 1 cup salted butter
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp bakng soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 3 cups rolled oats
Instructions
- In a small bowl, mix together the raisins and rum. Continue to mix every couple of minutes while preparing the cookie dough.
- Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper and set aside.
- In a large bowl, cream together the butter and sugars until light and fluffy. Slowly mix in the eggs one at a time, beating after every addition. Mix in the vanilla.
- In a separate bowl, mix together the flour, baking soda, cinnamon, nutmeg and ginger.
- Slowly mix the dry ingredients into the wet ingredients until fully incorporated.
- Add in the oats and the bowl with the raisins and rum. Mix until just combined.
- Using a medium cookie scoop, scoop the cookie dough onto the prepared cookie sheets and bake in the preheated oven for 8-10 minutes, or until the edges of the cookies begin to look golden.
- Allow to cool on cookie sheets for around 2 minutes before transferring to wire racks to cool completely.
