You know those mornings where you can’t decide whether to have a breakfast sandwich, a bagel or an omelette? (Honestly with these rhetorical questions of mine, I am only describing myself…) Well look no further! With a wham and a bam (and some pam) you can create… a combination of all three! Who’da thunk it? (I’m using all this hype to make it seem like I made an elaborate breakfast when this is just my “I need to get out of the house and I’m in a hurry” kind of breakfast)
So this is how I start my mornings. In a panicked haze, trying to find something to eat for breakfast, because I need to be out of the door in a couple of minutes. For a normal person, this may seem acceptable since if you really have to be out the door by 7:30am, waking up is a process in itself at that hour, let alone making breakfast. But for me, I wake up at around 4am normally, so I have more than plenty of time to get even a grand breakfast ready.
But I get too distracted. Usually by…*cough* math books *cough*cough*. Call me a nerd, but…math is pretty cool. How I got the nickname Mathleen. Not very nickname-y since it takes the same amount of time saying that as it would my actual name, but people find it amusing. They even made me a pencil with a flag saying “I love math”. Now it will proudly fly every time I need to write anything down.
What you’ll need:
-2 eggs
-1/4 large onion, chopped into cubes
-2 slices tomato
-1 bagel
+seasoning salt
+cooking spray
Directions:
1. In a small bowl, beat the egg. Add some seasoning salt (to your preference) and mix well. Fold the onion into the egg mixture.
2. Pour the egg mixture onto a skillet sprayed with cooking spray on medium heat. Flip after around 3 minutes.
3. Meanwhile, toast the bagel.
4. Assemble sandwich and enjoy!

I have the same dilemma, only mine happens at night before I sleep… Yes, I start thinking of breakfast before I hit the sack. I used to not care so much for bagels but my boyfriend got me into it. You know what I discovered yesterday when I was making an egg omelet to eat with my bagel? Cook alfalfa or clover sprouts in your eggs. They are delicious!

If only we were gradeschool seatmates, I could have aced my Math scores…Well, I am pretty much a breakfast eater. My mom used to tell me, I have to start my day with a big breakfast to make sure I'd last the whole day. It kinda' got stuck in me. The same thing I am telling my daughter. I wake up an hour before heading where I am supposed to be, but the 45 minutes of that is spent with breakfast, yup! I can get ready in 15 minutes or less.
