Well, if you are looking at me, I would have to say BARELY made it through. This week seemed to drag on forever.
But spring is right around the corner, so warm weather is on the horizon. But until then, I will be making this soup on repeat.
What you need to make Orzo Spinach Soup
One thing I love about this Orzo Spinach Soup is that uses ingredients that I always keep on hand. All you need is:
- oil
- onions
- spinach
- carrots
- garlic
- vegetable broth
- diced tomatoes
- orzo
- dried thyme
- oregano
- rosemary
- salt & pepper
- crushed red pepper flakes
I love throwing the baby spinach in the soup whole because I think it makes the soup look pretty. My husband on the other hand HATES it. He says it is a lot harder to eat, which maybe is true. But I kinda like that extra texture in the soup.
If you are like him and want this soup to be more manageable to eat, you can definitely cut up the spinach. I won’t be offended.
These winter months, my go-to soup recipe has been my Vegan Coconut Curry Lentil Soup. But now with this soup, I think it is a regular rotation of the two these soups.
They are both vegan and SO easy to make. I love pairing it with a good sourdough bread and some cheese.
And don’t worry. I will still be making this soup through the spring, and probably summer months as well.

Orzo Spinach Soup
Ingredients
- 1 Tbsp oil
- 1 medium onion, peeled and diced
- 2 medium carrots, peeled and cut into coins
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 (14 oz) can diced tomatoes
- 1 1/2 cups orzo
- 1/2 tsp dried thyme
- 1/4 tsp oregano
- 1/4 tsp rosemary
- 4 cups baby spinach
- salt and pepper to taste
- 1/4 tsp crushed red pepper flakes
Instructions
- Heat the oil in a large saucepan over medium heat. Saute the onion for 4 minutes until transparent. Add in the carrots and garlic and saute for an additional 4 minutes.
- Stir in the vegetable broth, tomatoes, orzo, thyme, oregano and rosemary. Bring the soup to a boil and reduce heat to medium low and simmer for 10 minutes, stiring occasionally.
- Mix in the spinach and cook for around 1 minute, or until the spinach is wilted. Season with more salt and pepper to taste, and mix in the crushed red pepper flakes.

This spinach and Orzo soup looks enticing with all the different flavors and textures you have combined. Most of the ingredients I have on hand already, so before Florida heats up again for the year, I will be making this awesome recipe. It also looks like it would be ok frozen too— have you frozen it before? Let me know if you think it would be ok.

I have never frozen it, but I think it should work without the spinach. Just put the spinach in after!

What a tasty but light soup to have for a warming lunch during our super rainy season. It was easy to make and loved the rosemary and Italian type seasonings mixed with the orzo. I think I’m going to try it with chicken next time as the family likes soups that are a little heartier.
