So I bought a panini grill a couple of months ago. One of the best purchases I’ve made. Honestly, if you do not have a panini grill, go out right now and buy one. Toss anything you want between two slices of bread and put in on the panini grill. The result will taste amazing, I kid you not. And if you put cheese in it, the house ends up smelling of toasted bread and melted cheese. Some of my favorite smells. So good.
But this time, I put more thought into what I put into my sandwich. I even bought some thin round buns, which I thought would be perfect on my panini grill (it was, by the way). Since I almost always have a can of salmon in my cupboard, I thought why not make a salmon melt?
What you’ll need:
-1 can Salmon
-2 tablespoons plain yogurt
-1 teaspoon lemon juice
-1/3 cup parmesan cheese
-1 cup shredded cheddar cheese
-1 thin round bun (or two slices of bread)
Directions:
1. Drain the can of salmon, and put the drained salmon in a medium bowl. Mix the salmon with the yogurt and lemon juice until the lumps of salmon are gone.
2. Mix in the cheeses, until fully combined.
3. Spread evenly on one side of the bun and place the other side on top to make a sandwich. Place on panini grill and leave there until desired crispiness. (Or you can grease a pan, and place the sandwich on the pan, flipping at your desired crispiness)
