Easy Peanut Butter and Molasses Cookies recipe. This is the best dessert idea that I have made with molasses yet!
Remember when I made my Soft Gingerbread Cookies because I had too many containers of molasses in my house? Well I also taste tested this Peanut Butter and Molasses Cookies recipe with my many containers of molasses. But I am only getting around to posting it now.
I am clearly taking this summer vacation very seriously.
What makes these cookies amazing? The molasses and the peanut butter really come together to make a unique and wonderful flavour combination that I am currently OBSESSED with.
Even after I tested this Peanut Butter and Molasses Cookies recipe to my liking, I kept making it. While I am regretting that now that I have limited new recipes to share with you, it seemed like a good idea at the time.
Especially since I couldn’t bring these cookies to work. I think that I may even make things with peanut butter on purpose, so that I get to eat it all myself.
But next year, my school is NOT a nut free school. So my excuses will go out the window. I will be forced to share! I guess I also need to share with my husband now that we are going to be living in the same city this year. He is the one that I REALLY need to look out for.
So what do you think? Should I keep a secret stash of these cookies in the freezer so John won’t find them?
The number one problem I had when we used to live together was when I made cookies at night and left for work the next morning, John would eat them all before I got home. How disappointing is that?
Okay, so fine. That may not have been our number one problem. But this is one problem that a hidden cookie stash would definitely solve!
Peanut Butter and Molasses Cookies Ingredients
All you need to make these cookies is:
- all purpose flour
- baking soda
- ground cinnamon
- ground ginger
- ground cloves
- brown sugar
- smooth peanut butter
- salted butter
- eggs
- molasses
- vanilla extract

Peanut Butter and Molasses Cookies
Ingredients
- 1 1/8 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/2 cup brown sugar, packed
- 1/4 cup smooth peanut butter
- 2 Tbsp salted butter, softened
- 1 large egg
- 1 large egg yolk
- 2 Tbsp molasses
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350˚F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, mix together the flour, baking soda, cinnamon, ginger and cloves.
- In the bowl of a stand mixer, cream together the sugar, peanut butter and butter until light and fluffy. Mix in the egg, egg yolk, molasses and vanilla.
- Slowly mix in the dry ingredients until fully incorporated.
- Using a cookie scoop, scoop the cookie dough onto the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the edges are firm. Allow to cool on the baking sheet for around 5 minutes, then transfer to wire racs to cool completely.

The recipe didn’t mention how many cookies it yielded. Using a medium scoop, I only got 17 cookies. I will use a smaller scoop next time or double the batch. These will go fast! Great combination of flavors!

I highly recommend doubling recipe if you intend to share them with anyone that is. I formed balls from the dough and crisscrossed them with fork like traditional peanut butter cookies. Maybe my dough was a little stiff? Either way they turned out fabulous. Next time I’m going to add chocolate chips to half of the dough. Texture is perfect and they are practically health food.
