Easy Peanut Butter Chip Cold Brew Muffins recipe. A great way to use up extra brewed coffee, they make a great breakfast treat or dessert.
Looking for a way to use up some cold brew you have lying around your fridge? Well, look no further.
I truly have a problem with drinking cold brew. At any given moment, I have a minimum of 3 containers of cold brew in my fridge. So right before I set out for my loooong road trip to Vancouver, I needed a way to use up a big portion of my cold brew. That is how these Peanut Butter Chip Cold Brew Muffins were born.
Not only does it help me use up my cold brew, it makes great road trip snacks. So that is a win all around in my opinion.
Peanut Butter Chip Cold Brew Muffins Ingredients
To make these muffins, all you need is:
- flour
- brown sugar
- cocoa powder
- baking soda
- cold brew concentrate
- oil
- apple cider vinegar
- peanut butter chips
That’s it!
Storage & Freezing
- Storage: To store these muffins, place in an airtight container. They will be good for up to 4 days on the counter, and up to 7 days in the fridge.
- Freezing: To freeze these muffins, place them in a large freezer bag, and store in the freezer for up to 3 months. When you are ready to eat them, remove from the ziplock bag and allow to defrost overnight. Alternatively, you could microwave them straight from the freezer for 20-30 seconds, or until warm.

Peanut Butter Chip Cold Brew Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup brown sugar, packed
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1 cup cold brew concentrate (or strong brewed coffee)
- 1/3 cup oil
- 2 Tbsp apple cider vinegar
- 1 1/2 cups peanut butter chips
Instructions
- Preheat the oven to 350°F. Line a muffin pan with paper liners and set aside.
- In a large bowl, mix together the flour, brown sugar, cocoa powder and baking soda.
- In a small bowl, mix together the cold brew, oil and vinegar.
- Slowly mix the coffee mixture into the flour mixture until fully combined Fold in the peanut butter chips.
- Fill the muffin cups around 3/4 full and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for around 5 minutes before transferring to wire racks to cool completely.
