Long weekend!! Whenever there is any type of holiday, you just know that I head straight to my kitchen and bake. Not that I’m not always baking anyways. I just stock up on the goodies when I can find the time.
Something I haven’t made in a while is fudge. Why? Who knows. But now that it’s starting to heat up here in Toronto, I needed something that won’t heat up my kitchen. And fudge is perfect for that.
Okay, technically this peanut butter chocolate and oats fudge isn’t fudge in the traditional sense. This doesn’t have the sweetened condensed milk that your typical fudge has, so it’s a great recipe to make when you are out. Depending on what chocolate chips you use, you can make this vegan and gluten free.
And plus the chocolate and peanut butter combo? You know that is my favorite combo, right? Almost every time you see a recipe involving chocolate, there will most likely be peanut butter in it. I seriously can’t get enough.
In fact if you look at my breakfast this morning, you would see toast with a little bit of chocolate Reese’s spread. Aka: the best spread ever. Nutella really needs to partner with a peanut butter company and mix their spread with peanut butter. I would buy it in a second.
But where has this Peanut Butter Chocolate and Oats Fudge been my whole life? I am already planning on adding it to my holiday cookie trays, even though it is not a cookie. It is too good NOT to share. Next time, I might make these into no bake chocolate oatmeal cookies for an after school snack.
Peanut Butter Chocolate and Oats Fudge Ingredients
You just need a couple of simple ingredients to make these peanut butter oatmeal fudge bars. All you need is:
- 1 cup peanut butter
- 2/3 cup honey
- 1/2 cup coconut oil
- 1 cup old-fashioned oats
- 1 1/4 cup chocolate chips
- 2/3 cup dried cranberries
Tips
Storage: Store this peanut butter oatmeal chocolate fudge in an airtight container. I would not suggest storing at room temperature, since it may soften if your house is overly hot. Store them in the fridge with a layer of wax paper or parchment paper separating each layer in the air-tight container so they don’t stick to one another.
Don’t have old fashioned oats? No problem! Quick oats work well in these chocolate peanut butter oatmeal bars too.
What kind of peanut butter is best? I like using crunchy peanut butter, but creamy peanut butter works well too. I would not recommend using natural peanut butter because it is a little too liquid, and won’t hold this fudge together very well.
Variations
Swap out the peanut butter. Instead of using regular peanut butter, try almond butter or sunflower seed butter. If you wanted to make this fudge even more decadent, try it with cookie butter instead.
Make these bars vegan. Instead of honey, use pure maple syrup or karo syrup (corn syrup). Then use dairy-free chocolate chips.
Ramp up the peanut butter flavor. Instead of chocolate chips, replace them with peanut butter chips!

Peanut Butter, Oats and Cranberry Fudge
Ingredients
- 1 cup crunchy peanut butter
- 2/3 cup honey
- 1/2 cup coconut oil
- 1 cup old fashioned oats
- 1 1/4 cups chocolate chips
- 2/3 cups dried cranberries
Instructions
- Line an 8×8 baking pan with parchment paper and set aside.
- Place the peanut butter, honey and coconut oil in a microwave safe bowl. Heat for 2 minutes, removing every 30 seconds to stir.
- Mix in the oats, chocolate chips and cranberries until the chocolate is melted. Pour into the prepared baking pan and place in the refrigerator to harden, around 2 hours.
