Easy Peanut Butter Cup Mug Cake recipe. This mug cake is the perfect treat for when you want a last minute easy dessert recipe.
Ever since I made my first mug cake recipe back when I was in high school, I have been addicted to making mug desserts. The issue with my family is that I was the only one who liked sweet foods. So if I made a whole cake, I would be the only one eating it. This single serving dessert is one of best things that has happened to me. Not being dramatic in the least.
Since I had a bunch of Reese’s minis, I thought that I would make this Peanut Butter Cup Mug Cake. And this is one of the best desserts I have made in a long time.
This moist peanut butter mug cake recipe has it all. Gooey chocolate inside a delicious peanut butter cake makes for the best mug cake. I mean, how can you resist the peanut butter chocolate combo? It is one of my favorite combos, so you know that this is quickly becoming one of my favorite dessert recipes. I have been making it after my toddler goes to sleep lately because I have the biggest sweet tooth, and don’t want to share this cozy dessert. It is just too good.
Peanut Butter Cup Mug Cake Ingredients
You just need 8 simple ingredients to make this peanut butter chocolate mug cake. All you need is:
- all purpose flour
- granulated sugar (white sugar)
- baking powder
- large egg
- creamy peanut butter
- milk
- oil (I love either avocado or coconut oil)
- mini Reese’s peanut butter cups
Tips
Make it vegan. To make it vegan, you would need to use nondairy milk instead of cow’s milk, and swap out the egg for a flax egg. I personally like either almond milk or soy milk in this recipe. To make a flax egg, mix together 1 Tablespoon of ground flax to 3 Tablespoons of water. Allow to rest for 5 minutes before using.
Keep an eye on the cake while it’s in the microwave. Because every microwave is different, the exact cooking time may change. While the mug cake is cooking, make sure to watch the cake rise. Once it rises past the edge of your mug, pause the microwave for a couple of seconds, then resume cooking until the top of the mug cake has set.
Swap out the chocolate peanut butter cup. Instead of mini Reese’s, use your favorite mix-ins!
Make sure you use a microwave-safe mug. If you use a coffee mug that is not meant for the microwave, your microwave cake may overheat and have a rubbery texture. Look at the bottom of your mug to make sure that yours works with the microwave.
