These Peanut Butter & Jelly Muffins are the perfect grab and go breakfast recipe. Using strawberry preserves, it makes an easy snack idea.
We are moving again!
This year has been a crazy rollercoaster ride. What with having a baby, getting a new job, not getting my work visa on time and having to stay in Canada before moving to Madison… and now we bought a house!
We move in next month, so I am trying to use up all of the ingredients we have in our current short term rental. You know, to reduce the amount of boxes we need to pack. And these Peanut Butter & Jelly Muffins use ingredients I already have in my pantry.
What you need to make Peanut Butter & Jelly Muffins
- flour
- salt
- baking powder
- white sugar
- peanut butter
- eggs
- milk
- vanilla extract
- coconut oil
- strawberry preserves
Substitutions
These muffins are so versatile, you can it switch up so many of the ingredients.
If you don’t have peanut butter on hand, any kind of nut butter would do.
As for the strawberry preserves, I love switching that up for any flavour I have on hand. The other day I tried it with apricot, and I might even like it better. Even though it doesn’t sound as classic a combo.
If you wanted to make these muffins look like bakery style muffins, try sprinkling some peanuts on top. It adds a nice crunch, and the presentation looks great.

Peanut Butter and Jelly Muffins
Ingredients
- 2 cups all-purpose flour
- 1 tsp salt
- 1 Tbsp baking powder
- 1/2 cup granulated sugar
- 1 cup creamy peanut butter
- 2 large eggs
- 1 cup milk
- 2 tsp vanilla extract
- 1/4 cup coconut oil
- 3/4 cup strawberry preserves
Instructions
- Preheat the oven to 375˚F. Line a muffin tin with paper liners and set aside.
- In the bowl of a stand mixer, mix together the flour, salt, baking powder and sugar. Mix in the peanut butter until crumbly.
- In a medium bowl, whisk together the eggs, milk, vanilla extract and coconut oil.
- Slowly mix the egg mixture into the flour mixture until just combined.
- Fill each cup halfway with the batter. Spoon 1 tablespoon of strawberry preserves unto each cup, then top with the remaining batter.
- Bake in the preheated oven for 18-20 minutes.
- Allow to cool in the muffin tin.

Does it matter what kind of peanut butter we use? I have all-natural – is that o.k.?

Baking soda or baking powder ? It says baking powder in ingredients and baking soda in instructions.
