I have got to stop spending money on protein bars.
With a newborn baby, I am waking up constantly in the middle of the night. And night feedings make me SO hungry. I crave high protein snacks to keep me satisfied longer, and protein bars help satisfy my sweet tooth.. but at a cost. Do you know how expensive protein bars are these days? This is why I made these Peanut Butter Mocha Protein Cookies.
Not only do they have the best taste, they are a sweet treat with a short ingredient list. Plus, they do a great job at reducing my weekly grocery bill. And with no refined sugar and no artificial sweeteners, this easy recipe is probably a lot healthier than the protein bars I usually buy at the grocery store anyways.
Peanut Butter Mocha Protein Cookies Ingredients
You only need 5 simple ingredients to make this protein cookie recipe.. All you need is:
- creamy peanut butter
- cocoa powder
- white sugar
- mocha whey protein powder
- eggs

What type of peanut butter to use? I use creamy peanut butter for a smoother taste, but crunchy peanut butter works well too! I would not recommend natural peanut butter, just because it is fairly runny. If you DO want to use natural creamy peanut butter, just add some more cocoa powder and protein powder to make up for the increased liquid.
Variations
Change up the type of protein powder you use. This recipe is so versatile, you can use any flavor of protein powder you have on hand! It doesn’t need to be whey protein isolate, you can also use plant-based protein such as pea protein. However, I wouldn’t recommend using an unflavored protein powder just because the protein powder is what gives it most of its taste.
Switch out the peanut butter. If you don’t have peanut butter on hand or if you are allergic, use something else! I have had success with almond butter and sunflower seed butter, but there are so many different kinds of spreads you can experiment with!
Add in some mix-ins. I am a chocolate girlie, so I love adding a little bit of semi-sweet chocolate chips or chunks of unsweetened chocolate to almost all of my recipes. If you wanted to enhance the peanut butter flavor, add in some peanut butter chips! You could also experiment with different nuts or dried fruit.

Peanut Butter Mocha Protein Cookies
Ingredients
- 2/3 cup creamy peanut butter
- 2 Tbsp cocoa powder
- 1/2 cup granulated sugar
- 2 scoops mocha protein powder
- 2 large eggs
Instructions
- Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together all of the ingredients until fully combined.
- Using a cookie scoop, scoop the cookie dough onto the prepared baking sheet. Press down using a fork.
- Bake in the preheated oven for 10 minutes, then allow to cool for an additional 10 minutes on the baking sheet. Transfer to wire racks to cool completely.
