Wasn’t it just the first day of spring a week or two ago? Why is it that I am already craving smores? But then again, anything with chocolate has me like 😍. So it’s no surprise that I am all about the smores. Be it around the campfire, in the form of a smores brownie pie, and now, my new favorite, in peanut butter brownie form.
Looking back on my posts, it seems like the last time I made anything with peanut butter was 2 months ago! It might be because I work at a nut free school, but I have been missing the peanut butter and chocolate combo lately so I had to make some new recipes. These brownies were made to satisfy my cravings. I mean, just look at all that melty chocolate! These brownies have already been all eaten, but I am planning on making them again. Looking at these pictures and not having one in my hand is torture!
These Peanut Butter Smores Layered Brownies are even more decadent than they look, if that’s even possible. The bottom brownie layer is so dense and fudgy, and also has chocolate chips baked in for an extra crunch. Then you have the marshmallow layer. With this layer, the sky is the limit. You can go from 1/2 your standard bag of mini marshmallows to your full bag. I won’t judge 😉 The last chocolate layer is my favorite. I seriously can’t stop sampling it. It is made with chocolate and peanut butter, which is without question the best combo ever invented, with some broken up graham crackers mixed in. This way you get two crunchy sides with a chewy marshmallow centre sandwiched on the inside.
Peanut Butter Smores Layered Brownies Ingredients
You just need a couple of simple ingredients to make this S’mores brownies recipe. All you need is:
Brownie Base
- 4.25 oz semisweet chocolate chips
- 1/3 cup butter
- 2 large eggs
- 1 cup white sugar
- 1 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1/2 tsp baking powder
- 1/3 cup milk chocolate chips
Smores Layer
- 1/2-1 bag regular marshmallows
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup creamy peanut butter
- 1 Tbsp unsalted butter
- 3 graham cracker biscuits
Tips
Storage: you can store these peanut butter s’mores brownies in an airtight container at room temperature for up to 2 days. You can store them longer in the fridge, however they may begin to dry out.
Use chocolate bars instead of chocolate chips. The chocolate is essential for fudgy brownies, but if you don’t have chocolate chips, bars work just as well. Try experimenting with different kinds as well, such as dark chocolate or white chocolate!
Line your baking pan with parchment paper. This helps for a more easy removal of the bars from the pan. Once you have lined your baking dish with parchment paper, pour brownie batter into your prepared pan and bake brownies according to the recipe card.
Variations
Up the peanut butter flavor. If you wanted these brownies to have a more intense peanut butter flavor, use peanut butter chips in the peanut butter layer instead of chocolate chips.
Use box mix. Or your favorite homemade brownie recipe. There is no shame in using boxed brownie mix if you are short on time!

Peanut Butter Smores Layered Brownies
Ingredients
Brownie Layer
- 4.25 oz semi-sweet chocolate chips
- 1/3 cup salted butter
- 2 large eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1/2 tsp baking powder
- 1/3 cup milk chocolate chips
Smores Layers
- 1/2 - 1 bag mini marshmallows
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup smooth peanut butter
- 1 Tbsp unsalted butter
- 3 graham cracker biscuits, broken in large pieces
Instructions
- Preheat the oven to 350°F. Lightly spray a 9x13 inch pan and set aside.
- In a microwave safe bowl, combine 4.25 oz semi sweet chocolate and 1/3 cup butter. Microwave in 30 second intervals, mixing until smooth. Set aside for 5 minutes to cool.
- In a medium bowl, beat the eggs. Add in the sugar and vanilla and beat well.
- Add the melted chocolate into the egg mixture, and mix until fully combined. Add in the flour and baking powder, mixing until fully combined. Fold in the chocolate chips.
- Pour into the prepared baking pan, and bake for 10-15 minutes, or until a toothpick inserted in the centre comes out clean.
- Sprinkle evenly with marshmallows and return to the oven for 5-8 minutes, until the marshmallows puff and melt slightly. Remove from the oven.
- Meanwhile, combine the chocolate chips, peanut butter and 1 Tbsp butter. Melt in 30 second intervals, mixing until smooth. Add in the graham crackers. Allow to cool for 3 minutes.
- Spread the mixture over the marshmallow layer. Allow to cool for 10-15 minutes, then place in the fridge to cool completely. Cut into squares when cooled.
