As soon as Halloween is over, I am all about making Christmas recipes.
Doesn’t matter that now that I am in the US, we now have Thanksgiving first. I want to start baking all of the cookies for Christmas already.
These Pear and Raisin Oatmeal Cookies are probably going to be on my holiday baking rotation.
What do you need to make these Pear and Raisin Oatmeal Cookies?
These cookies are so easy to make. All you need is
- oats
- flour
- baking soda
- cinnamon
- butter
- brown sugar
- eggs
- milk
- vanilla extract
- raisins
- pear
That’s it!
These cookies kind of remind me of my Apple and Raisin Oatmeal Cookies that I made a couple of months ago. But since I ran out of apples today, pear it is.
I am lucky that my husband likes raisins in baking as much as I do, because I can’t stop baking with them! Somehow, my cupboards are overflowing with raisins, and baking is the only thing that I can think of doing with them,
These cookies are so good, and so versatile too.
Don’t have raisins? Sub in chocolate chips or dried cranberries.
Don’t have pears? Sub in apples or any other fruit you want. Get creative with it!
Pear and Raisin Oatmeal Cookies
Ingredients
- 3 cups old fashioned oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 3/4 cup salted butter, softened
- 1 1/4 cup brown sugar
- 1 large egg
- 1/3 cup milk
- 1 Tbsp vanilla extract
- 1 1/2 cups raisins
- 1 medium pear, peeled, cored and cubed
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, mix together the oats, flour, baking soda and cinnamon. Set aside.
- In a seperate bowl, cream together the butter and sugar until light and fluffy. Mix in the egg, milk and vanilla until fully combined.
- Slowly mix in the dry ingredients into the wet ingredients until fully incorporated. Fold in the raisins and pears.
- Using a cookie scoop, scoop the cookie dough onto the prepared baking sheets and bake in the preheated oven for 15-20 minutes, or until lightly browned. Allow to cool for around 2 minutes on the baking sheets before transferring to wire racks to cool completely.
