Who else is already thinking about Christmas before Thanksgiving is over?
I might have an excuse because I lived in Canada for most of my life. There, Thanksgiving is even before Halloween! So as soon as Halloween is over, we are all about the Christmas decorations and baking.
Now excuse me while I bake Christmas cookies nonstop for the next 2 months.
I just bought peppermint chunks from Target on a whim, and I am so glad I did. This will definitely be my new favourite mix-in for cookies over the holiday season.
But if you can’t find peppermint chunks, any mix ins will do. White chocolate chips, dried cranberries, m&ms.. get creative with it!
What do you need to make these Peppermint Chunk Brownie Cookies?
These cookies are so easy to make too! All you need is:
- butter
- brown & white sugar
- eggs
- vanilla
- peppermint extract
- flour
- cocoa powder
- baking soda
- salt
- peppermint chunks
That’s it!
So these cookies are admittedly very similar to my Fudgy Chocolate Cookies that I also make so often. But I wanted to make it fit with the holiday season, and use some of the mix ins that are only around once a year. These cookies definitely fit the bill!

Peppermint Chunk Brownie Cookies
Ingredients
- 2/3 cup salted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 tsp pure peppermint extract
- 1 Tbsp water
- 1 1/2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 cups peppermint chunks
Instructions
- Preheat the oven to 375˚F.
- In a large bowl, beat together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Mix in the vanilla, peppermint extract and water until fully combined.
- In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt. Slowly mix in the dry mixture to the wet ingredients until fully incorporated. Fold in the peppermint chunks.
- Drop the dough by tablespoonfuls onto ungreased baking sheets.
- Bake in the preheated oven for 7-10 minutes. Let the cookies cool for around 3 minutes on the baking sheet, then transfer to wire racks to cool completely.
