As a food blogger, I need to make the recipes sometimes months in advance, so that I know that I will have some good, taste tested recipes for you all. But when it comes to oatmeal recipes? I know what will work and what won’t. There is very minimal recipe testing here.
So let’s get this holiday season started with this Peppermint Chunk Brownie Oatmeal.
What do you need to make this Peppermint Chunk Brownie Oatmeal?
This recipe is so easy to make, which makes it perfect for a last minute holiday breakfast idea. All you need is:
- milk
- oats
- unsweetened cocoa powder
- brown sugar
- peppermint extract
- peppermint chunks
That’s it!
If you have been following me for a while now, you may have seen my Brownie Oatmeal recipe, that I basically make on repeat most days.
This recipe is similar to that one, but I made it festive. Because every December, I crave that chocolate and peppermint combo. I don’t even want to think about how many holiday drinks I have bought over the years…
So if you need something quick to make for Christmas morning, I would definitely suggest that you make make this. Or these Funfetti Christmas Pancakes.
I will try to save enough peppermint chunks to make it all the way to Christmas, but I doubt I will make it. I will probably need to buy another shopping basket’s worth of these delicious chunks.

Peppermint Chunk Brownie Oatmeal
Ingredients
- 1 cup milk of choice
- 1/2 cup rolled oats
- 1 Tbsp unsweetened cocoa powder
- 1 1/2 Tbsp brown sugar
- 1-2 drops pure peppermint extract
- 3 Tbsp peppermint chunks
Instructions
- In a small saucepan, bring the milk to boil.
- Once it starts to boil, add the oats, cocoa powder and sugar. Cook uncovered over medium-low heat for about 10 minutes, stirring occasionally.
- Remove from heat and mix in the peppermint extract. Pour into a bowl and top with peppermint chunks.
