Easy Peppermint Creamer Chocolate Muffins recipe. These rich chocolate muffins make a great afternoon snack, and pair great with a cup of coffee.
I have been in full Christmas mode since the beginning of December. I absolutely love this time of year, and it is even more special now that I have kids. We are taking advantage of all of the Christmas events around the city, just so I can share in the sweet moments of the Christmas season with them.
And of course, what comes with the holiday season are lots of treats. My 3 year old has indulged in plenty of goodies already, and it isn’t even close to Christmas! And because I was craving a Christmasy kind of muffin, I decided to make these Peppermint Creamer Chocolate Muffins as more of a healthy muffin recipe. Healthy in relation to the other muffin recipes that I usually make.
Personally, I love the combination of peppermint and chocolate. It seems like you either love it or hate it. I personally always crave the festive peppermint flavor in everything this time of year. So you can bet that I am going to be making these chocolate mint muffins on repeat for the next couple of weeks.
Peppermint Creamer Chocolate Muffins Ingredients
You just need a couple of simple ingredients to make this peppermint chocolate muffin recipe. All you need is:
- all purpose flour
- cocoa powder
- baking powder
- salt
- oil
- vanilla extract
- white sugar
- egg
- peppermint coffee creamer
- crushed candy canes
Tips
Storage: Store cooled peppermint chocolate muffins in an airtight container at room temperature for up to 4 days.
Add more peppermint flavor. The recipe as written has a light peppermint taste, but if you want it more intense, try adding in some peppermint extract. Adding in some peppermint chocolate chips to really take these chocolate peppermint muffins to the next level.
Make them into peppermint mocha muffins. I love a good peppermint mocha, so this variation is one of my favorites. Just add in 2 teaspoons of instant coffee to the dry ingredients, and make the rest of the recipe according to the recipe card.

Peppermint Creamer Chocolate Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/3 cup oil
- 1 tsp vanilla extract
- 1/3 cup granulated sugar
- 1 large egg
- 1 cup peppermint creamer
- 1/4 cup crushed candy canes
Instructions
- Preheat the oven to 375℉. Line a muffin pan with paper liners and set aside.
- In a medium bowl, mix together the flour, cocoa powder, baking powder and salt.
- In a large bowl, mix together the oil, vanilla extract, sugar, egg and creamer until fully combined.
- Slowly mix the dry ingredients into the wet ingredients until just combined.
- Divide the batter evenly between the prepared muffin cups. Top each muffin with crushed candy canes and bake in the preheated oven for 16 minutes, or until a toothpick inserted comes out clean.
