What a crazy week! Is it just me, or did every day this week feel like a Friday?? I think this is what the holidays do to you. You feel done almost every day.
Personally speaking here, what the holidays do to me is make me all kinds of sick! I am already starting to feel it creeping on, so I am going to eat as much sugar and junk now before it hits me for real. Who’s with me?
I actually made this fudge for my grade 12 students writing their exams. I put them in individual containers, and told them to come and pick them up before their exams. But as you know with exams, you are too busy to do anything other than study. So no one came.
Actually, that’s not true. I think I had maybe 6 come to see me. Which meant that I had a bag full of fudge to eat for myself. I only pretended to be sad, because, let’s be real. A bag of fudge after a long week is a pretty much all I want. And maybe a very comfortable bed.
Fudge is one of those things that just gets you into the holiday kind of mood. Rich and super sweet, you really can’t eat it all by yourself. Which makes them perfect gifts for the holiday season!
I have given most of the fudge away, but I am saving some in an airtight container to have a little something sweet with all the coffee I will be consuming this weekend. The copious amounts of tests to be marked are piling up, and I am hoping to get them done before I fly out to Vancouver for the holidays.
So I have a week. Wish me luck!
Peppermint Fudge
Ingredients
- 1 can sweetened condensed milk
- 1 Tbsp salted butter
- 1 lb chocolate chips
- 1/4 tsp salt
- 1/4 tsp pure peppermint extract
- 1/2 cup peppermint pieces
Instructions
- Grease a 9×18 inch baking pan. Set aside.
- In a medium saucepan on medium heat, mix together the condensed milk and butter until the butter is melted. Add in the chocolate chips, and mix until the chocolate is melted and remove immediately. Make sure to keep an eye on it! You don’t want your chocolate to burn!
- Mix in the salt, peppermint extract and vanilla until fully combined.
- Pour the fudge mixture into the prepared pan. Sprinkle the top with the peppermint pieces. Place in the fridge for at least 3 hours before cutting into squares.
- Store in an airtight container in the refrigerator.
