Pistachio, Cranberry and Coconut Peanut Butter Chocolate Cups recipe, that is so quick and easy to make. No bake, vegan and gluten free, they make a great last minute dessert idea.
Can we take a minute to talk about how HOT and HUMID it has been lately?? I have been afraid to leave my house these past few days because of how hot it is, and my dehumidifier has been running nonstop. Seriously, I need to empty that thing daily. So baking has all but stopped in my house. But that doesn’t mean that I am going off desserts. That just means I need to find creative, no bake dessert recipes.
These Pistachio, Cranberry and Coconut Peanut Butter Chocolate Cups are giving me life! Not only do they combine my two favourite ingredients: peanut butter and chocolate, but they also combine all of my favourite mix-ins: pistachios, cranberries and coconut chips. You all know how much I love coconut chips.
But my favourite coconut chips may need to step aside. I have a new favourite snack food in town. The dried cranberries that I topped these cups with from Wild Coast Fruit are definitely becoming a new addiction!
If you haven’t heard of this company before, you should definitely check them out! They are a Canadian company that sells dried cranberries and dried blueberries exclusively. As they only have the two products, you can bet that they are going to make them the best dang dried cranberries and blueberries you have ever tried.
I have already made a recipe using their dried blueberries that I have been making almost weekly until it got too hot to turn on my oven. So here is a recipe using their dried cranberries that is no bake to balance it out.

The only problem with ME eating them by themselves as a snack is that then I can’t share a recipe with you. But they are SO GOOD by themselves, that I could kinda use another bag or two myself 😉.

Pistachio, Cranberry and Coconut Peanut Butter Chocolate Cups
Ingredients
- 1/2 cup chocolate chips
- 2 Tbsp peanut butter
- 2 Tbsp coconut oil
- 2 tsp pistachios, shelled and chopped
- 2 tsp dried cranberries
- 2 tsp coconut chips
Instructions
- Line 4 regular sized muffin cavities with paper liners. Set aside.
- In a microwave safe bowl, microwave all of the ingredients except for the coconut chips in 30 second intervals, mixing after each interval until smooth.
- Divide the chocolate evenly into each cavity. Sprinkle the tops with 1/2 tsp each of pistachios, dried cranberries and coconut chips. Place in the freezer until the chocolate has hardened, around 30 minutes.
