Easy Pistachio Latte Oatmeal Recipe. Made with coffee and topped with yogurt, this makes the perfect quick breakfast idea.
Somehow I am still here in Chicago WITHOUT any baking equipment.
I am going crazy here!! This might be the longest I have ever gone without baking something.
Please! Someone! Lend me a baking sheet or cake pan! I will be eternally grateful!
So basically, we don’t eat desserts here anymore. Which, okay fine. Maybe that’s not SUCH a big deal compared to all of the other things we need to get sorted to transition into living in a new country.
Things like social security numbers and making sure I get a bank account so that I will be paid.
You know. The big deal things.
But that’s not stopping me from making my breakfasts LOOK like desserts while I wait for my baking pans.
I KNOW that I seem oatmeal obsessed.
Okay, scratch that. I AM oatmeal obsessed. But believe me when I tell you that this Pistachio Latte Oatmeal is something else.
Not only is it ready in 5 minutes (like most of my oatmeal recipes are), it combines 2 of my favourite things: oatmeal (duh) and pistachios!
Tell me, have you ever met anyone who DOESN’T like pistachios?? Given that they aren’t allergic of course.
Because I have never. It is an expensive snack to get addicted to, but I just can’t help myself. They are just too dang good.
So while I wait for my baking pans to arrive in the mail, let’s all have this oatmeal as a dessert replacement. I think it does a good job!
Pistachio Latte Oatmeal
Ingredients
- 2/3 cup strong brewaed coffee
- 1/3 cup milk of choice
- 1/2 cup old fashioned oats
- 1 Tbsp maple syrup
- 1 Tbsp chia seeds
- 1/4 cup yogurt
- 1 Tbsp pistachios, chopped
Instructions
- Heat the coffee and milk in a small saucepan on medium heat. Add in the oats, maple syrup and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
- Pour into a bowl, and top with yogurt and pistachios.
