I almost forgot how busy it is to be a teacher. Nothing like the first week back to remind me that I will have no free time until the winter break.
In fact, the only time when I am not teaching or lesson planning is in the long commute to work. And since I take the subway, I get the luxury of reading for nearly an hour before I need to begin talking until my voice is hoarse right till the end of the day.
By the time I get home I am famished. And even though I love teaching more than anything, at the end of the day I am totally exhausted. I need something to snack on that is minimal effort and maximum comfort.
Enter: these biscuits!
These biscuits were actually made because my boyfriend was so sick of seeing another can of tomato paste go to waste that after he used half the can making soup, he handed it to me and said: throw this out.
Maybe he knows that I hate throwing things out, but I feel like he was challenging me to make something with it. Well, challenge accepted!
The best thing about these biscuits is how many variations you can make! Try adding in some pepperoni! How about some jalapenos and mozzarella and make some jalapeno and mozzarella biscuits. Also, you can’t forget the cheese! Having cheesy biscuits is one of my favourite accompaniment to soup. Feel free to add more, I won’t tell!
Pizza Biscuits
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2 tsp granulated sugar
- 4 tsp baking powder
- 1/2 tsp cream of tartar
- 1/2 cup shortening
- 2/3 cup shredded cheddar cheese
- 2/3 cup milk
- 2 Tbsp tomato paste
Instructions
- Preheat the oven to 425˚F.
- In a medium bowl, combine the flour, salt sugar baking powder and cream of tartar. Pour into a food processor, and add the shortening. Pulse to mix until the mixture resembles coarse meal.
- Stir in the cheese with a fork. Mix in the milk until fully combined.
- Turn the dough onto a floured surface, and flatten into a rectangular shape. Cut the dough into squares.
- Place the dough onto a ungreased baking sheet, and bake for around 15 minutes, or until golden brown.
