Easy Pepperoni Pizza Quesadilla recipe made with only 4 ingredients: flour tortillas, tomato paste, mozzarella cheese and pepperoni.
If you haven’t noticed, I have a huge weakness for pepperoni. There is always the classic pepperoni pizza that I will make on lazy weeknights. Then there is the homemade pizza bagels for when I want to burn the roof of my mouth and relive my childhood. Of course, you have got to get some pepperoni grilled cheese sandwiches in the mix if you want to see my addiction in full force. But these Pizza Quesadillas may be the quickest and easiest thing that I have made yet. I will need to make them on a daily basis to keep up my pepperoni habit. It makes it feel like pizza night every time I make it.
It is also no secret that I love quesadillas. I make them for lunch most weekends, and order them at most restaurants when a craving hits really hard.
What I find weird is that quesadillas are always under the appetizers category on menus. No thank you, there is no way I am sharing my quesadillas. They are all mine.
Since my quick and easy quesadillas usually consist of cheese, a bell pepper and flour or corn tortillas, these Pizza Quesadillas were almost like a treat for me. John was worried that I was going to eat nothing but snacks while I am living alone. Maybe his worry now should be that I will only be eating these Pizza Quesadillas for the next year. This is an easy snack (or an easy meal) that I can get behind!
Pizza Quesadillas Ingredients
Best of all, these Pizza Quesadillas are so easy to make! You just need 4 simple ingredients:
- tomato paste or tomato sauce (I liked it with herbs and spices!)
- flour tortillas
- mozzarella cheese
- pepperoni slices
And, if you are like me, hot sauce! I generously shake hot sauce over almost everything I eat!
Tips
Pair these quesadillas with your favorite dip. Instead of just a regular quesadilla, try dipping it in some extra marinara sauce, sour cream or (my personal favorite) ranch dressing. Or you could also sprinkle some Parmesan cheese on top.
What to serve with these Pizza Quesadillas: These quesadillas make a quick meal when paired with a side salad or some fresh fruit.
If you want extra crispy tortillas: use an electric griddle! for some reason, that way always gives me extra crispy pizza quesadillas. Just place it on there on medium heat, and flip after 2-3 minutes when the tortillas are golden brown.
Variations
Add in your favorite pizza toppings! Some of my favorite toppings are black olives, bell peppers or banana peppers. An extra layer of cheese also elevates these quesadillas to a whole new level.
Try adding a thin layer of pizza sauce instead of the tomato paste. If you have some pizza sauce, adding a little bit to the bottom tortilla will make it taste more like regular pizza. The pizza flavor really shines through, but I don’t usually have pizza sauce so that’s why I always use tomato paste.
Switch up the melted cheese. While mozzarella cheese is the classic cheese in this pepperoni and cheese pizza quesadilla, I also like a nice cheddar cheese flavor in my quesadillas. Getting a long string of orange melty cheese from the cheddar is one of the greatest pleasures I get, but feel free to try other cheeses too.

Pizza Quesadilla
Ingredients
- 2-3 Tbsp tomato paste
- 2 large flour tortilla
- 1/2 cup mozzarella cheese, shredded
- 8 pepperoni slices
Instructions
- Spread the tomato paste over 1 side of a flour tortilla. Sprinkle with mozzarella cheese and top with pepperoni slices. Top with the second tortilla
- Lightly spray a large skillet with cooking spray. Place the quesadilla on the skillet and cook on medium heat for 2-3 minutes on each side, or until the cheese has melted.

We eat quesadillas a few times a month. This is one of the foods that we make that our kids help with because they can do the assembly. We have never tried a pizza themed variety, and I know our kids would be excited about it.
