Easy Potato Bacon and Corn Chowder recipe. A simple and hearty dinner idea that makes great comfort food on a cold day.
As the weather gets colder, I am craving a hearty soup. With corn season coming to an end and soup season upon us, I want a comforting and delicious meal. And this Potato Bacon and Corn Chowder is the ultimate comfort food.
I am pretty obsessed with making chowder. Actually, I am obsessed with making my Leftover Chicken Corn Chowder. I have leftover chicken in my house on a fairly regular basis, so I make that one over and over again. And that is rare for a food blogger.
But now that I’ve made this Potato Bacon and Corn Chowder? I think this one might be the best corn chowder that I have ever made.
Any time I can add tender potatoes to any kind of soup, I will. I love how hearty and filling it makes the soup. Plus I always buy it in bulk, so I always have some on hand.
I know that I am going to be making this potato corn and bacon recipe on repeat after I give birth. I will definitely be craving a hearty corn chowder, and this Potato Bacon and Corn Chowder fits the bill!
Potato Bacon and Corn Chowder Ingredients
You just need a couple of simple ingredients to make this potato bacon corn chowder recipe. All you need is:
- butter
- chopped onion
- garlic
- all purpose flour
- chicken broth
- potatoes
- cheese
- heavy cream
- frozen or fresh corn kernels
- cooked bacon
- black pepper
- pinch of salt
That’s it!
Tips & Variations
Storage: Store any leftover potato corn chowder in an airtight container in the fridge for up to 4 days.
Don’t have chicken broth? You can replace it with vegetable broth, vegetable stock or chicken stock.
Add more spices. This recipe is a good base recipe, but you can always jazz it up with some more spices if you don’t think this has much flavor. Some spices I love adding in are a bay leaf, some red pepper flakes or cayenne pepper.
What potatoes to use? You can use pretty much any potatoes you have on hand. I particularly love Yukon gold potatoes or red potatoes.
Add something extra on top of the soup. Some reserved crispy bacon and some green onions are perfect on top of this creamy soup.
Cook some more cooked vegetables. Some chopped red bell pepper or broccoli would be a great way to add some color and more flavor to this warm bowl of soup.

Potato Bacon and Corn Chowder
Ingredients
- 3 Tbsp salted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 Tbsp all-purpose flour
- 4 cups chicken broth
- 4 medium russet potatoes, peeled and cut into 1 inch cubes
- 2 cups cheddar cheese, shredded
- 1/4 cup heavy cream
- 4 cups frozen corn
- 1/2 cup cooked bacon bits
- salt and pepper to taste
Instructions
- In a large saucepan, melt the butter over medium heat. Cook the onion and garlic until fragrant, around 3 minutes. Mix in the flour and cook for a minute, continuously stirring.
- Mix in the chicken broth and potatoes and bring to a boil. Reduce heat and allow to simmer, stirring occasionally. Cook until potatoes are tender.
- Mix in the heavy cream. Add in the cheese and stir until melted. Mix in the corn and half of the bacon. Allow to simmer until the corn is heated through, around 4 minutes.
- Ladle into bowls and top with additional bacon and cheese if desired.
