Usually I am team apple. But after making this Pumpkin Spice Protein Bread? I think I might be team pumpkin this week.
This Pumpkin Spice Protein Bread might be cheating a little bit. It doesn’t actually have any pumpkin in it. But it DOES have some Premier Protein Pumpkin Spice Shake in it. I got sent a box of them, and I can’t stop drinking it. So I decided to share the love and put it in a sweet loaf recipe.
This bread is not very sweet, so you can top eat it with your favourite spread, or even make it into French toast. I made so much French toast with it. That actually might be my favourite way to eat it these days.
What do you need to make this Pumpkin Spice Protein Bread?
As long as you have the Protein shake, the rest of the ingredients are mainly pantry essentials. All you need is:
- flour
- baking powder
- baking soda
- pumpkin pie spice
- baking stevia (or white sugar)
- brown sugar
- eggs
- Pumpkin protein shake
- oil
- pumpkin seeds

Pumpkin Spice Protein Bread
Ingredients
- 1 2/3 cup all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 3 tsp pumpkin pie spice
- 3/4 cup baking stevia
- 1/4 cup brown sugar
- 2 large eggs
- 1 cup Premier Protein Pumpkin Spice Shake
- 1/2 cup avocado oil
- 1/2 cup pumpkin seeds
Instructions
- Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
- In a large bowl, mix together the flour, baking powder, baking soda, pumpkin pie spice, stevia and brown sugar until combined.
- In a medium bowl, beat the eggs. Mix in the protein shake and oil until smooth.
- Slowly mix in wet ingredients into the dry ingredients until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and sprinkle with pumpkin seeds. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow to cool in the pan for around 15 minutes before transferring to wire racks to cool completely.
