Healthy Roasted Parmesan Edamame recipe. Frozen edamame is baked in the oven to make a quick and easy appetizer or snack idea.
Wanna know a secret?
Every time John isn’t home for dinner, I will just eat snacks for dinner. It’s bad, but I don’t see the point in cooking for one!
So when this happens, I usually end up eating a huge bowl of popcorn with some cookies. Or snack on all of the baked goods that I have made that week.
Tonight, it looked a little different. I promised John I would be healthy without his supervision tonight. So I made myself this healthy snack.
At least I am making progress towards an actual healthy meal!
To be honest, I am kinda scared for when he goes away to Vancouver for a year next year. What will I do with myself? Will I actually be able to make myself a real dinner? Just warning you, you may see a lot of snack recipes popping up on the blog next year.
But if it ends up being as healthy as this Roasted Parmesan Edamame, is that really a bad thing? I mean, I could eat this stuff all day. It is truly addicting!
Seriously you guys. You need to make this. All you need are 5 ingredients:
- frozen edamame
- olive oil
- Parmesan
- salt
- pepper
That’s it!! And the salt and pepper don’t really count as ingredients, right? So this is basically a 3 ingredient snack idea.
If that doesn’t send you running to the kitchen to make this, I don’t know what will!
I wanted to save some for lunch tomorrow, but who am I kidding? There is no way that this would last for more than 10 minutes around me. Also, it is edamame, so it is healthy, right? No guilt eating the whole pan!
Except for maybe all of the Parmesan that I am consuming. But to be honest, you probably eat more cheese on one slice of pizza than you do this entire pan. So think of it as a healthier version of pizza. Minus the gluten and the heavy feeling in your stomach after eating the whole thing.
Because you know if I had a pizza in front of me, nothing would stop me from eating the whole thing.
Good thing I opted for this edamame snack instead!

Roasted Parmesan Edamame
Ingredients
- 3 cups frozen edamame
- 1 Tbsp olive oil
- 1/4 cup Parmesan cheese, grated
- 1/4 tsp salt
- 1/4 tsp ground pepper
Instructions
- Preheat the oven to 400 ˚F. Line a baking sheet with parchment paper.
- Pour the edamame on the baking sheet and spread it with your fingers so that it is in one layer.
- Drizzle with olive oil. Sprinkle with Parmesan, salt and pepper. Mix with your hands and make sure it is coated evenly.
- Bake in the preheated oven for 15 minutes.
