As we are approaching a New Year, the pressures to reset and restart your life seem to be coming from every direction.
Eat better. Exercise more. Wake up earlier. Meditate once a day. Be more mindful.
I am feeling a little overwhelmed to be honest, so I’m going to be taking baby steps. Starting with this Roasted Turmeric Cauliflower.
This recipe is a great way to begin the healthy eating after the holidays, and it’s so easy to make too. All you need is:
- cauliflower
- oil
- turmeric
- cayenne pepper
- red pepper flakes
- salt
- thyme
That’s it!
I was looking through my blog the other day, and noticed that I didn’t have too many recipes with cauliflower. It’s really rare that I buy cauliflower, and when I do, I usually end up making my grandmother’s Egg and Cauliflower Casserole.
But after making this recipe, I can’t stop making it! I’m not usually a fan of cauliflower, but in this recipe it is so so good.
John actually just looked over my shoulder right now as I am writing up this recipe, and he goes “you should make that again tonight. It’s so good.”
And that means a lot coming from him. While he isn’t as picky as he was when we first started dating, he does know what he wants and will not eat something that doesn’t meet his standards.
Hope everyone has a healthy and happy New Year!
