Well. It has been a hot minute since I last posted something on here.
If you haven’t been following my Instagram stories, I am currently in Italy and am loving every minute.
THIS is what relaxing feels like! Italy is full of so many things to see and so many things to eat, I didn’t have any time (or energy) left to update the blog!
But, luckily for you (and for me) I wrote up a whole bunch of recipe drafts with photos before I left. That way, all I need to do in Italy is write up this short blah blah in the beginning that no one reads anyways.
I mean, I hope some of you are!
But even this short blurb is a daunting task when on holiday trying to relax. I’ll be lucky if I can get 1 more out before I get back!
Okay! So here we are. My Salted Caramel and White Chocolate Chip Cookies.
That is quite a mouthful! But if I am being completely honest, this recipe is identical to the cookie base of the Salted Caramel and White Chocolate Chip Cheesecake Cookie Cups from my last post. But I need to update the blog, so it’s this recipe or no recipe today!
Plus, what if you weren’t looking for cheesecake cups? What if all you want is a recipe for a dang good cookie? Well, look no further!
I gave some of these cookies to my colleagues before I left Toronto, and a got a lot of people telling me that they are the best cookies that they have ever tasted.
Sure, they could just be trying to butter me up to make them more cookies. But even in my opinion, these are SO good.
If you haven’t tried salted caramel chips, please please please, try them soon! They will change the way you bake for the better.
Plus then you can make these cookies! You can bet that I will be making them as soon as I get back from Italy!
Salted Caramel and White Chocolate Chip Cookies
Ingredients
- 3/4 cup salted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- large egg
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup salted caramel chips
- 3/4 cup white chocolate chips
Instructions
- Preheat the oven to 350°F. Line two baking sheets with parchment paper and set aside.
- In a large bowl, cream together the butter and sugars until light and fluffy. Add in the egg and vanilla, and mix until fully incorporated.
- In a separate bowl, mix together the flour, cornstarch, baking soda and salt. Mix the dry ingredients into the wet ingredients until fully combined. Fold in the salted caramel and white chocolate chips.
- With a cookie scoop, scoop the cookie dough onto the prepared baking sheets, and bake in the preheated oven for 8-10 minutes, or until lightly browned. Allow to cool completely on baking sheet.
