Maybe I lost about half of you who have made the New Year’s resolution to eat healthier. My New Year’s resolution is to eat healthier every day, except for emergencies.
Like period weeks.
And Mondays.
And I am being encouraged to!!
My brother in law actually bought me 2 HUGE tubs of Nutella for Christmas. He made sure I had enough room in my suitcase to bring that home with me to Toronto.
I left a LOT of clothes in their house in Vancouver to accommodate all of the Nutella. Because #priorities.
Okay, so first thing’s first. If you have never tried the Hershey’s Sea Salt Caramel Chips, you need to run out and buy that. It is a game changer to any cookie you make.
Next, get yourself some good quality chocolate chips. Chocolate chips make or break the cookie recipe. If your chocolate chips are off, it can ruin an entire batch of otherwise good cookies.
Another key to a good cookie recipe is Nutella. At least 1/2 a cup.
Even if you made a resolution to eat healthier this New Year, I would suggest bookmarking this recipe and saving it for a rainy day. You never know what day you will need a treat or will need something to cheer someone else with.

Salted Caramel Nutella Chocolate Chip Cookies
Ingredients
- 1/2 cup salted butter, softened
- 1/2 cup Nutella
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1 cup salted caramel chips
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
- In a medium bowl, cream together the butter, Nutella and the sugars until light and fluffy. Add in the egg and vanilla, and mix until fully combined.
- In a separate bowl, mix together the flour, cornstarch and baking powder. Mix into the wet ingredients until fully incorporated.
- Fold in the caramel chips and chocolate chips.
- Using a medium cookie scoop, scoop batter onto the prepared baking sheets and bake in the preheated oven for 9-11 minutes. Allow the cookies to cool completely on baking sheet.
