I love a quick and easy dinner recipe. Especially on weeks like this one.
I feel like I say this every week, but this week in particular… it seems like everything is happening all at once, and I am struggling to keep on top of all of the work.
So I’m keeping my dinners simple.
What you need to make Sausage and Bell Pepper Rotini
And by simple, I mean minimal ingredients and ready in under 30 minutes.
Like this recipe! Ready in 20 minutes, and all you need is:
- rotini
- olive oil
- sausages
- onion
- bell peppers
- garlic powder
- chicken broth
- parmesan cheese
So basically, all of your pantry essentials tossed into a bowl and made into a dinner.
For my quick dinners this week, I have been going between making this pasta and my Brown Sugar Glazed Salmon. I have a bunch of salmon and sausages in my house, always on hand.
You never know when you need to whip up dinner in 20 minutes.
(actually yes, I always know. It is every day right now)
But it is about 1 week until Spring Break, and while I love my job, I desperately need a break right now.
It might get so busy in the last few days of school that I might need to order take out. But for now, it’s this pasta on repeat.

Sausage and Bell Pepper Rotini
Ingredients
- 16 oz rotini
- 1 Tbsp olive oil
- 4 sausages
- 1 medium onion, diced
- 1 medium orange bell peppers, diced
- 1/2 tsp garlic powder
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese
Instructions
- Cook the rotini in a medium saucepan according to package directions. Drain and set aside.
- In a large skillet, heat the oil. Cook the sausages until golden. Remove from saucepan and set aside.
- In the same saucepan, cook the onion, bell pepper and garlic for 1-2 minutes.
- Slice the sausages and add to the skillet with the vegetables. Cook for around 1 minute.
- Mix in the garlic powder and chicken broth. Add in the rotini and Parmesan, and mix until combined.
