In the search of the easiest breakfast to make (which is not cereal, I’ve had two lifetimes worth of cereal, I pretty much only cook with it now. I may have some once in a while. I still do like cereal, just not every morning) I have gone with the basics. Eggs.
It’s true, this looks like very little for breakfast. Just toast some toast along with it and a yogurt, and it’s the easiest of breakfasts. All you really need for the this is eggs, cheese, milk and a microwave (I added green onions because I love any kind of onion. And as an added bonus, this one doesn’t make my cry)
This took me at most 5 minutes. Which is great. And I love anything in a mug. I mean, there is way less to clean up. You just dump everything in there. No extra mixing bowls to wash, just the mug you made it in. The mugs in my house are so big, you could eat cereal out of them (which I do. Who am I kidding, I can’t get sick of cereal, it’s pretty good stuff) In a regular sized cup, I’m thinking it may overflow. But hey, I may be wrong 😉
What you’ll need:
-2 eggs
-2 tablespoons milk
-2 tablespoons cheese
-1 tablespoon chopped green onions (optional)
-salt and pepper to taste
Directions:
1. Whisk the eggs and milk in the mug. Add salt and pepper to your taste. Mix 1 tablespoon of cheese and the green onions in the egg mixture.
2. Sprinkle the remaining 1 tablespoon of cheese on top
3. Put it in the microwave for around 1 1/2 minutes
