Easy Sheet Pan Pork Chop and Vegetables for 2. This recipe is a great weeknight meal idea for easy clean up. Ready in under 45 minutes.
Sheet pan meals are by far my favourite thing to make on busy nights.
All you have to do is put everything onto your sheet pan, put it in the oven and you are done! No standing over a hot stove. No running back and forth between two or three pans to get your dinner ready. You have it all in one convenient location. Which means less cleanup too!
And if you know me at all, you know that I am the worst at cleanup.
In my college student days, I used to buy pork chops all the time.
Mainly because it was a cheap way to get meat. But also because it is surprisingly good, if you know how to cook it.
And let me tell you, this is one of my favourite ways to cook it.
Plus it is so easy too! All you need is:
- pork chops
- sweet potatoes
- carrots
- onion
- salt & pepper
- garlic powder
- cayenne pepper
- olive oil

While, yes that recipe is so good, it does take quite a bit of effort to make. You need to make the breading. Then you need to coat the pork chops. Then…
Okay, so maybe it’s not THAT much effort. But when I want to spend as little time as possible in the kitchen, you know I will be making this sheet pan meal!
Sheet Pan Pork Chop and Vegetables
Ingredients
- 2 boneless pork chops
- 1 large sweet potato, sliced into 1/2 inch slices
- 2 medium carrots, peeled and sliced
- 1 small onion, sliced
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 2 Tbsp olive oil
Instructions
- Preheat the oven to 400°F. Arrange the vegetables on one side of a baking sheet and the pork chop on the other side.
- In a small bowl, mix together the salt, pepper, garlic powder and cayenne. Drizzle the olive oil over the vegetables and pork chops. Sprinkle with the seasoning mix.
- Bake in the preheated oven for 15 minutes. Flip the vegetables and bake for an additional 15 minutes.
