Can it be soup season already? I already had to pull out my jackets and scarves when I go out in the mornings. Having soup ready for me when I get home is just what I need after a long week.
Having bought this slow cooker a couple of weeks ago, I have been experimenting like crazy with it. Honestly, I don’t know why it has taken me so long to buy one, but I am loving it already!
One thing that I am never short of in my house is chicken. Be it chicken breast, chicken thighs, rotisserie chicken.. I am always well stocked.
And while I have been on a week long food coma from Thanksgiving, I think I can finally eat something that isn’t leftover turkey. Because being me, I somehow thought that making a 20 lb turkey for two people was a great idea. Thank goodness for freezers.
This soup is my favourite slow cooker dinner that I have made so far. I made it at least twice in two weeks, even though what I really should have been doing is thinking up ideas on how to eat turkey that ISN’T sandwiches or wraps. Somebody please help!
One of the great things about this soup is that you can adapt it to your preferences. Me and my boyfriend adore spicy food, so we put the hottest salsa we can find in. But if you like it more on the mild side, stick with mild salsa. Or as my mom used to do: add ketchup to all the jars of salsa in the house so that the salsa is not spicy at all. Though I can’t promise that that would be good..
Right now, I will continue experimenting with my slow cooker. See what works and take note of what doesn’t. But now I need suggestions: what slow cooker dinner should I make next?
Slow Cooker Creamy Chicken and Corn Soup
Ingredients
- 1 lb boneless chicken thighs
- 1 can condensed cream of chicken soup
- 1 can condensed cream of mushroom soup
- 2 cups frozen corn
- 1 1/2 cups water
- 1 tsp cumin
- 1 cup cheddar cheese, shredded
Instructions
- Lightly spray slow cooker with cooking spray. Place the chicken thighs in the slow cooker.
- In a medium bowl, mix together the soups, corn, water and cumin. Pour into the slow cooker.
- Cook on low for 4-6 hours. Remove from heat and break up the chicken. Stir in the cheese until fully combined.
