Simple Soft Gingerbread Cookies are not only for Christmas. This easy recipe is made with molasses and makes a perfect dessert or snack idea.
Why is it that I am always craving food in the wrong season?
During the winter, all I want are berries. During the summer all I want is soup. And now during spring, I can’t stop thinking about fall flavours.
Like pumpkin and apples. And these Soft Gingerbread Cookies
To be honest, one of the main reasons that I made these Soft Gingerbread Cookies is in an effort to use up all of the ingredients in my house.
Looking through my cupboards, it turns out I have SO many containers of molasses that I need to use up. Why I have so many? I don’t know. But if it means that I get to make these cookies on repeat, I don’t think I mind one bit!
Apart from molasses, these cookies are packed with all of the best fall spices including ginger, cinnamon, cloves and my favourite: nutmeg. Then rolled in white sugar to make them sparkly and SO indulgent!
These cookies are long gone now: I made them for my colleagues, but I really wish I made more. They are soft on the inside with a hard, sugary shell. My favourite way to enjoy a gingerbread cookie!
What you need to make Soft Gingerbread Cookies
You probably already have all of the ingredients. All you need is:
- flour
- baking soda
- spices (ginger, cinnamon, cloves, nutmeg)
- salt
- butter
- white & brown sugar
- egg
- strong brewed coffee
- molasses
So now I need help. What can I make with a LOT of molasses? I don’t want to throw any of the food I have at home out, so I need solutions!

Soft Gingerbread Cookies
Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 Tbsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup salted butter, softened
- 1 cup brown sugar
- 1 large egg
- 2 Tbsp strong brewed coffee
- 1/4 cup molasses
- 1/4 cup granulated sugar
Instructions
- Preheat the oven to 350˚F. Line baking sheets wiht parchment paper and set aside.
- In a medium bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt. Set aside.
- In the bowl of a stand mixer, cream together the butter and brown sugar until light and fluffy. Add in the egg, coffee and molasses and mix until fully combined.
- Slowly mix in the flour mixture until fully incorporated.
- Place the granulated sugar in a small bowl.
- Using a medium cookie scoop, form balls with the dough. Use your hands to roll into spheres, and roll the dough in the bowl of white sugar. Place the dough balls on the prepared baking sheets and bake for 10-12 minutes.
- Remove from the oven and allow to cool on the pans for around 5 minutes, then transfer to wire racks to cool completely.
