Homemade Starbucks Oat and Fudge Bars recipe. This copycat version tastes exactly like the original, so you can get your Starbucks dessert fix on the cheap!

I just went camping in Osoyoos, and it was the most beautiful campground I have ever been to. Surrounded by water with mountains all around. The perfect location to get away for 3 days. Osoyoos averages around 30 cm of rain per year. If it averaged 5 cm less, it would be considered a dessert.
So you’d think it would be dry and hot and a great warm up for when I go to Mexico in 3 weeks. But it turns out that for 2 of the 3 days we go, it rains. What bad timing.
But it all worked out in the end, because the last day was ridiculously hot. I was stumbling around to try to find some shade. I’m glad to be back in the cold, rainy weather of Vancouver.
Surprisingly, one of the things that I missed the most about being away from civilization was Starbucks.
I know that’s sad, but it’s true. So what do I do as soon as I get home? Well, since I’m too lazy to go all the way to a Starbucks, I make my own coffee. But what about some Starbucks treat to go with it?
Don’t worry, I’ve got that covered. I made a replica of my favorite thing at Starbucks: the oat and fudge bar.
Now I don’t need to dish out $2 along with my coffee at Starbucks to have one of these delicious treats, I can just make it at home!

Starbucks Oat and Fudge Bars
Ingredients
Oat Base
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup salted butter, softened
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking soda
- 3 cups old fashioned oats
Fudge
- 1 can (300 mL) sweetened condensed milk
- 2 cups chocolate chips
- 1/2 cup salted butter
Instructions
- Preheat the oven to 350˚F. Line a 9×13 pan with aluminum foil that covers the bottom and reaches up the sides.
- In a large bowl, cream together the sugars, 1 cup butter and eggs.
- In a separate bowl, mix together the flours, baking soda and oats. Slowly mix the flour mixture to the sugar mixture until fully incorporated.
- Spread 3/4 of this mixture into the prepared pan.
- In a medium saucepan, melt the fudge ingredients on medium heat, mixing until smooth.
- Pour the chocolate mixture over the dough in the pan, then blob the remaining oat mixture on top.
- Bake for 25 minutes. Remove from oven and let cool for at least 30 minutes, then refrigerate.

I too made these to entertain myself during social distancing! They were really tasty and easy to make. I love the fudge oat bars at Starbucks and these were just as good (or better!) We ate ours while they were still warm, so they were a little gooey (they were too yummy to wait!). I think next time I will leave them in the fridge for longer and let them firm up a bit more before eating them. The only critique I have is that I think parchment paper works better for the bottom of the pan, assuming that the tinfoil is only there to prevent sticking. I used tinfoil as stated in the recipe and ended up getting tinfoil bits in my bars when I cut them.

I made these this past week and am IN LOVE! The flavours are spot on for Starbucks copy cat. The texture of the oat mixture for me was a bit off — but honestly nothing to complain about. I would make in a 9×13 next time since the bars I made ended up being quite thick in a 7×11! Overall, so good. Thank you!

It depends what whole wheat flour you have. It may make the mixture a lot drier, but it should work okay.

It may depend on what part of the country people are from, but back in the 1980s, these were called Fudge Jumbles and they were made by Pillsbury. There were three varieties and they were all delicious. I have no idea why they discontinued them because they were such a huge seller. Here is an old commercial for them, if it’s ok to post.

I’ve been missing these so much since they were discontinued from the Starbucks in my area. They taste the exact same. I also took some to work because it was a pretty big batch and my coworker came back for 5ths saying “these are crack in a square” haha so great recipe, thank you!!! (I used semi-sweet chips and found foil stuck to the bottom so will be using parchment next time)

They freeze very well! Just keep them in an airtight freezer bag, and they should last for around 3 months in the freezer.
