I am always so late in the game.
As soon as the Christmas coffee cups come out, I finally start baking with pumpkin. Maybe because there are finally pumpkin on the shelves (unfair, right?). But it might also be that now that Halloween is over, pumpkin seems to have disappeared and everyone is trying to shove Christmas down your throat.
I want pumpkin back!
I actually made this bread for one of my student’s birthday. As soon as I brought the bread out, students swarmed from all around, phones out to take pictures of the bread to snapchat, tweet or whatever these crazy kids do nowadays.
^^Seriously is one of the benefits of all students having a phone on their person. Making the teacher feel special when we do something nice. Maybe I should bake them something whenever there is a test day so they don’t hate me as much.
This bread came about when I realize that I have been spending more money on Starbucks than I am on actual groceries.
I really wish that wasn’t so close to the truth.
So instead of spending close to $3 on a slice of bread from Starbucks, I decided to try to make it myself. And after many attempts, and different recipes, I finally found the one that matches it the closest. Just in time for them to be kicked out of Starbucks in favor of more Christmas-like desserts.
Now let me eat 3 more slices please and thank you.
Starbucks Pumpkin Bread
Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 3/4 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 3 large eggs
- 1 3/4 cup pumpkin puree
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 2 tsp ground cloves
- 4 tsp ground cinnamon
- 2 tsp ground nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2/3 cup pumpkin seeds
Instructions
- Preheat the oven to 350°F. Lightly spray two loaf pans and set aside.
- Beat together the sugar and oil until fully combined. Mix in the eggs, pumpkin and applesauce until fully incorporated.
- In a separate bowl, mix together the flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder until fully combined.
- Slowly mix the dry ingredients in with the wet ingredients until just combined.
- Split the batter into the prepared loaf pans. Sprinkle 1/3 cup pumpkin seeds on each loaf, and place in the preheated oven for 1 hour, or until a toothpick inserted comes out clean.
