I am going through a HUGE smoothie bowl phase right now. I mean, it’s bad. Sometimes I stay up at night thinking about all of the smoothie bowl combinations I can make, and what toppings to add.
I totally wish I was kidding, but this is for real how I end up with sleepless nights. I am starting to miss my sleepless nights being caused by staying up all night marking tests and homework.
(Total lie. Smoothie bowl thoughts are always the best thoughts.
The reason this smoothie bowl came was half a sleepless night, but mostly the fact that I had some spinach in my fridge that was looking pretty wilted and in need of use. And, I’m not going to lie, this is how most of the ingredients for my recipes are chosen: what is looking the worst in my fridge at the moment.
Clearly, I had some fruit that needed using too.
One of the things I love about making smoothie bowls is how you can take a bunch of fruit, mix them in a blender, pour them in a bowl and, with the right arrangement of fruit on top, make this mess look as good as it tastes.
That is, until you mix it all up like I did in the above picture. Looks like a beautiful mess to me!
And this smoothie bowl is so easy to modify. If you don’t like the fruits, try something else! Maybe pineapple or mango! And if you are vegan: great! Just sub almond milk for the regular milk. Don’t like spinach in your smoothies? First of all, don’t knock it until you try it. But if you have tried it and still don’t like it, just remove it no problem.
Strawberry and Blueberry Smoothie Bowl
Ingredients
Smoothie Bowl
- 1 cup baby spinach
- 1 cup frozen blueberries
- 1 cup frozen strawberries
- 2 medium bananas, cut unto coins and frozen
- 1 cup milk of choice
Toppings
- strawberries
- shredded coconut
- chia seeds
- granola
Instructions
- Combine all the ingredients in a blender until smooth.
- Pour evenly into 2 bowls. Top with extra strawberries, coconut, granola and chia seeds.
No Spoon Necessary
I could eat smoothie bowls for breakfast daily and never get board, so I am loving this one!! Blueberries, strawberries and bananas? Yes please! Plus I love that you added a bit of spinach for good measure! Gotta get my greens! SO GOOD! Cheers!
