Okay, I have been trying to churn out recipes for Canada Day, but since it is only a couple of days away (!!!) this is probably going to be my last one.
But hey. I produced more Canada Day recipes in the past week than I have in my entire blog’s history.

Can’t say I didn’t try.
At least Canada Day gives me an excuse to buy all the delicious red berries that are in season.
A couple of days ago, that included me featuring raspberries in my raspberry coconut chia seed pudding.This week, it is strawberries in this layer cake.
I mean, look at those strawberries ^^^!! You can’t look at those and walk right on by.
Well I can’t just look at them and walk on by. Regardless of the price, I am going home with those suckers. And they won’t last the night.
That is, unless I am making a cake.
One of the surest ways that I can make fruits last is when I bake them unto some type of cake of quick bread. Sure I can devour a container of strawberries in one sitting, but an entire cake? No. This is going to last at least a couple of days.
But since it is loaded with fruits, this means that it is suitable for breakfast, right? Riiight??
Don’t worry. I don’t need permission. That is happening, even if it is frowned upon.
But we are celebrating aren’t we? It is Canada’s birthday week! And America’s too! Cake is required breakfast food on birthday weeks. It is in my books anyways.
My layer cakes usually look like poop, which means I don’t post them often. So I was obviously worried about this one. I mean, having only one Canada Day recipe on Canada’s 150th anniversary? That seems unpatriotic somehow.
But this strawberry layer cake turned out beautifully, if I don’t say so myself. The strawberries complimented the white cake perfectly. And this white cake is so easy to make that even… well, even I could do it! And that’s saying something.

Strawberry Layer Cake
Ingredients
Cake
- 2 cups granulated sugar
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 3/4 cup canola oil
- 3 large egg whites
- 2 tsp vanilla extract
- 1 1/2 cups milk
Frosting
- 1 1/2 cups butter softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
To decorate
- 2 cups strawberries halved
- 2 cups strawberries whole
Instructions
- Preheat the oven to 350°F. Lightly butter 2 8-inch round cake pans and line the bottoms with parchment paper.
- In a medium bowl, mix together the granulated sugar, flour, baking powder and salt. Set aside.
- In the bowl of your stand mixer, mix together the oil, egg whites, vanilla and milk. Slowly add in the dry ingredients, mixing until just combined.
- Divide the batter evenly into the prepared cake pans. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted comes out clean.
- Remove from oven and allow to cool in pans for 5 minutes before removing and transferring them to wire racks to cool completely.
- For the frosting: In the bowl of your stand mixer, beat together the frosting ingredients until smooth.
- Level the cooled cakes, and frost with the icing. Place the halved strawberries in the middle layer, and top with whole strawberries.

Yes you can! Just melt it and allow to cool for a bit
