Saturday or Sunday Morning Pancakes. Perfect for a weekend brunch or breakfast. This is my favourite recipe for pancakes.
Is it the weekend yet?
Not that I really want it to be. I am currently on “November Break” with my school. Basically a week to recharge and get some rest. For the students and the teachers.
I am spending the November Break in Montreal with my sister. And I have brought a stack of tests with me, waiting to be marked. Needless to say, I haven’t touched them.
I’m saving it for the train ride home.
Planning for my trip to Montreal, I made a couple of recipes right before I left so that I had something to share with all of you while I explore the food scene here.
Pancakes!! I can’t get enough! Pancake in French is “crepe”, so here in Montreal I wonder if they just don’t do the fluffy pancakes. I have seen a lot of restaurants selling crepes here, but who knows what that means? On a Sunday morning, all I want is a fatty stack of pancakes with some coffee. If I have that, I’m a happy girl.
And this pancake recipe is a winner.
I have been making this recipe for years now! It is basically the recipe from allrecipes.com for fluffy pancakes modified a liitle bit to my tastes. If you haven’t tried that recipe, please do because it is fan-freaking-tastic. But this one I find absorbs more of the syrup, or whatever topping you like putting on pancakes. And THAT is really what I look for in a pancake.
That and the taste. Obviously.
There was a time I made pancakes every day on weekends when I lived at home. I am an early riser naturally, so I would be downstairs anyways doing homework or reading a book. Then my mom would phone me from her bed and request pancakes. Which I would happily oblige. And this was the pancake recipe that I would always make.
Even after experimenting a LOT with all of my other pancake recipes, these Sunday Morning Pancakes is always everyone’s favourite. So simple and classic, I know this recipe by heart. And I think you should too.
I topped these with my blackberry sauce recipe that I made a while back, but you can top them with whatever you want.

Sunday Morning Pancakes
Ingredients
- 3/4 cup milk
- 2 Tbsp white vinegar
- 1 cup all-purpose flour
- 2 Tbsp granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 large egg
Instructions
- In a medium bowl, combine the milk and the vinegar, and let stand for at least 5 minutes to “sour”
- In a separate bowl, combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Whisk egg into the “soured” milk. Pour the flour mixture into the wet ingredients, and whisk it together until the batter is smooth.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.

Pancakes make such a special weekend breakfast. Just a stack of delicious soft pancakes dripping in syrup makes everybody at the breakfast table happy. I love your recipe,and pictures it looks so fluffy and soft…definitely would love to try this one out.

How much butter should be used? Should that be melted? It didn’t mention butter in the ingredients, just in the directions. Thanks!

Oops, sorry!! Sometimes I add in a couple of Tablespoons of butter, but I didn’t in the photos, so I took it out of the directions. Thanks for catching that Dedra!!
