West African Sweet Potato and Peanut Soup. This spicy soup is vegan and filled with chickpeas, this is the perfect dinner recipe.

Then this soup is for you! Even though it is still summer, I am craving ALL OF THE SOUP. Steaming hot spicy soup? Send it my way! Never mind that it is blisteringly hot outside. When I have a craving, I just go with it.
Actually, not really the case. Now that I am in Vancouver for the next couple of weeks, the weather is wayy colder than Toronto. And I didn’t come prepared.
For some reason, I thought it would be a good idea to bring strictly dresses, skirts and shorts. No long pants or sweaters in sight. And I am cold all the time. So that was probably a bad decision on my part.
Which obviously means some soup is in order!
This Sweet Potato and Peanut Soup is SO good. I mean, look at how CREAMY this looks! I could just swim in this soup if it wouldn’t burn my face off. And can you believe that it has no cream in it at all?
Nope, this Sweet Potato and Peanut Soup is vegan all the way, but you won’t miss the meat. Even my carnivore of a fiance loves this soup. It’s one of those rare meals where you actually look forward to the leftovers!
Just as a warning, this Sweet Potato and Peanut Soup is VERY spicy, but that is just the way I like it. If you are not a fan of spiciness, feel free to reduce the amount of red pepper flakes by half, or even omit it if you like.
Speaking of changes to this soup, feel free to try as many changes to this soup as you like. It is a very good base, and you can swap out ingredients depending on what is in your fridge, and what your preferences are.
If you want some meat, maybe switch the chickpeas for cooked chicken. If you don’t have spinach, swap it for another leafy green you have on hand, or just omit it. Whatevs. It’s your dinner!

Sweet Potato and Peanut Soup
Ingredients
- 1 Tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 Tbsp fresh ginger, grated
- 1 Tbsp crushed red pepper flakes
- 15 oz cooked chickpeas
- salt and pepper to taste
- 5 cups vegetable broth
- 3 1/2 cups sweet potatoes, peeled and cubed
- 28 oz crushed tomatoes
- 1 cup chunky peanut butter
- 3 cups baby spinach
- unsalted peanuts (optional)
Instructions
- Heat the olive in a large saucepan over medium heat. Cook the onion and garlic until fragrant, around 5 minutes.
- Add in the ginger, red pepper flakes, chickpeas, salt, pepper, chicken broth, sweet potatoes and crushed tomatoes. Bring to a boil stirring occasionally. Reduce heat, and allow to simmer for around 15 minutes.
- Mix in the peanut butter, and mix until it is fully incorporated. Mix in the spinach.
- Divide into bowls, and top with peanuts if desired.

Haha, no worries! John’s family likes a milder version so I always tone down the heat when I make dinner for them.

I love making Soup—one of my favorite foods! I’ve never tried Sweet Potato soup, but this looks so creamy and delicious! The combo of sweet potato and peanuts sounds even more interesting!
