Easy Two Bite Brownies recipe. This quick and simple dessert idea makes a great nut free snack idea.
Am I the only one who didn’t know when I moved to the USA that two bite brownies are a Canadian food?
I was really craving some the other day, and when I went to ask people in the grocery store, they looked at me like I was a crazy person. Of course, when I can’t buy something in stores, you can bet that I will be making it at home.
It might be for the best that I don’t buy it from stores. Now I will know that there is no artificial flavor, no modified palm oil, no modified corn starch, no corn syrup… just good old fashioned bite sized brownies. Plus, it is safe to bring to school too since it is free from peanuts and tree nuts.
Two Bite Brownies Ingredients
You basically only need some pantry essentials to make these bite-sized brownies. All you need is:
- eggs
- unsweetened cocoa powder
- baking powder
- cold brew concentrate
- vanilla extract
- white sugar
- salted butter
- all-purpose flour
Tips & Tricks
Make these brownies vegan! Vegan butter works well in place of regular butter. For the eggs, you can make chia eggs. To make a chia egg, all you need to do is replace each egg with a mixture of 1 tablespoon of chia seeds and 2.5 Tablespoons of water. Then make these mini muffins according to the recipe card for a vegan version!
Some essential kitchen tools for this recipe: Since you are making mini brownies, you will for sure need a mini muffin tin. Perhaps less essential but definitely helps with this recipe is a mini cookie scoop. This helps portioning out the brownies into the cups. Last thing is an electric mixer. I prefer the handheld ones for this recipe, but a stand mixer works well as well.
Storing these brownies: These brownies can be stored at room temperature in an airtight container for up to 7 days. You can store them for almost 2 weeks if you keep them in the fridge, however they tend to dry out.
Enhance the fudgy taste. If you (like me) are a chocolate lover, you can make these into rich double chocolate mini brownies. All you need to do is add in semi-sweet chocolate chips into the dry ingredients, or mix in some melted chocolate at the end. Or you could even do both! Go crazy with it, and make it your own.
Make these Two Bite Brownies into traditional brownies. If you don’t have a mini muffin pan, you could always put this batter into an 8×8 inch baking pan. You will need to adjust the cooking time and make it longer. I would recommend baking for around 30-35 minutes.

Two Bite Brownies
Ingredients
- 4 large eggs
- 1 1/2 cups cocoa powder
- 1 tsp baking powder
- 2 tsp cold brew concentrate
- 2 tsp vanilla extract
- 2 1/4 cups granulated sugar
- 1 cup salted butter, melted
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 350°F. Lightly spray a mini muffin pan with cooking spray and set aside.
- In a large bowl, mix together the eggs, cocoa powder, baking powder, cold brew concentrate and vanilla until fully combined. Mix in the sugar and butter. Fold in the flour until just combined.
- Scoop the brownie batter into the prepared mini muffin pan and bake in the preheated oven for around 12 minutes, or until a toothpick inserted comes out clean.
- Allow the brownies to cool for around 10 minutes in the pan, then transfer to wire racks to cool completely.
Notes
- Brownies can be stored in an airtight container for up to 4 days.
