Summer is finally upon us, and I have got to say, I don’t remember it ever being this hot.
You might feel bad for me until you hear that it has only been 22˚ so far. So yeah, I am a wimp when it comes to the weather, what can you do?

Well what can you do? Instead of immersing myself in a tub full of ice (which was my first idea..) I made ice cream instead. You know, the ice cream that will take the least amount of effort for my sluggish self. The vanilla kind.
Now when I hear vanilla, I hear “blah”. Everyone who I know thinks vanilla is so ordinary, so boring. I disagree 100%. Vanilla is fabulous. And this ice cream is even better. I often find myself daydreaming about vanilla. But now, I’m only daydreaming about this ice cream.
My boyfriend praised it as the best ice cream he has ever tried. And trust me, he’s a picky one. There is nothing “blah” about this ice cream. It is the perfect summer treat.
If you wanted to try another recipe that is similar to this ice cream on the blog, check out this Vanilla Bean Ice Cream. Or this Vanilla Pudding Ice Cream. Or heck, just search “vanilla ice cream” in the searchbar. I have way too many recipes for different variations. And I’m not even sorry.

Vanilla Ice Cream
Ingredients
- 4 1/2 cups half and half cream (or coffee cream)
- 3/4 cup granulated sugar
- 2 Tbsp pure vanilla extract
Instructions
- In a large saucepan, mix together the salt, half and half cream, milk and sugar. Heat on medium heat, and mix frequently until the sugar is dissolved. Remove from heat and mix in the vanilla extract. Refrigerate until completely cold, preferably overnight.
- Remove from the fridge and freeze in your ice cream maker according to manufacturer’s instructions.
- Place the ice cream in an airtight container and freeze until ready to serve.

Wow, you've made it from scratch
my sister used to whipped it over and over agan to make it soft an fluffy even more..
Simple and classic!
I'm jealous of your heat – it's so cold and grey here right now! (Which I guess is relative. It's in the 60s)
Cathleen , I'll have your 22°C then – ours is 29 at 10 am *sigh* Ice cream for sure to beat the heat ! Love your vanilla ice cream 🙂
I ADORE vanilla ice cream so I would never find this to be bleh! Looks great!
It is going to be 110 F here today, you'd totally melt with this delicious ice cream 🙂
oh cathleen, i guess you wouldnt want to stay in where i'm living now…it's 34C here today..i need some ice cream! now! LOL!
You make me want to go out and buy an ice cream maker! What creamy, lovely ice cream you've made! Years ago, when we lived in Brazil, I bought one because ice cream there was ridiculously expensive to buy. I discovered that so was cream so it hardly ever got used. Guess I'm a little slow on the uptake sometimes. 🙂 I must have given it away at some point.
My favorite part about vanilla is that is tastes great on its own but it also goes well with so many things, like strawberries or peaches or brownies or endless other delicious possibilities.
It’s been in the 100’s for the past month and I crave ice cream everyday when it is this hot. So this homemade vanilla ice cream will come in handy.
Right?? Tis the season! 🙂
Easy recipes are my cup of tea. Love how simple this is to put together. My daughter is an ice cream fiend in the summer, so I’m sure we’ll be making this more than once!
Haha, I like your daughter already 😉
Beautiful and delicious looking vanilla ice cream. We do not have half and half here, could I use regular heavy cream? Thank you for this recipe!
Yes that would work!! It will just be a lot creamier than mine, which I would love right now 😉
I don’t necessarily choose a simple vanilla ice cream when I’m at the store, but my mom bought some when she was here visiting and it was so good…sometimes simple is better! And I love that this recipe only has 3 ingredients and it comes together so quickly. Looks perfect for these hot summer days
I totally agree. Quick and easy and so simple 🙂
Wow I never knew making Vanilla Ice cream is so easy peasy. With just so minimum ingredients and turning out so light and fluffy.
I didn’t either! But I am all about using less ingredients 😉
I have just got a vintage ice cream maker, I am definitely going to use it to try this recipe out! So much better than anything you can buy in the store!
SO MUCH BETTER!! Thanks Jacqui!
Love! Nothing better than a classic vanilla ice cream. Especially since any toppings go perfectly with it.
That is one reason I love it so much 🙂
Yes, it’s been so hot over here, too, which made me an excuse to clean up the fridge. Now that I have a clean fridge, I think I deserve this vanilla ice cream. Plus, those sprinkles are so pretty!
The best reward 🙂
Love homemade ice creams, and vanilla is always my most favorite flavor. Thanks for this easy recipe.
Isn’t it the best??? Thanks 🙂
I love that this recipe for ice cream only takes 3 ingredients! Such a great treat to make for summertime and beyond!
It is so good during the summer 🙂
I love such an easy and delicious recipe. With just three ingredients you have made a lip-smacking Ice cram
Right?? Easier than going out and buying ice cream too 🙂
